Arabica vs Robusta
Nearly every cup of coffee on earth comes from one of two species. Arabica is Coffea arabica. Robusta is the trade name for Coffea canephora — strictly, for its var. robusta group, a variety whose name swallowed the species in everyday talk. A distant third, Liberica, is a rounding error by comparison.
The short version: Arabica tastes better and dies easier. Robusta survives anything and tastes of it. Everything below is the detail underneath that sentence — and the places where the detail is less settled than the trade pretends.

Genetics: one of them is a hybrid
Arabica carries four copies of eleven chromosomes — 44 in total — which makes it a polyploid, a plant with more than the usual two sets. It got them the hard way: C. arabica is itself the result of a natural hybridisation between two diploid species, Coffea canephora and Coffea eugenioides.1 Robusta, being one of those diploid parents, has 22.
So Arabica is, genetically, part Robusta. That is not a curiosity — it is the reason the two can be crossed at all when breeders force the issue, which is what produced the Timor Hybrid and, from it, the Catimor and Sarchimor families that carry Robusta’s resistance to Coffee leaf rust into Arabica farms. A large share of the world’s surviving Arabica has Robusta somewhere in its pedigree.
Chemistry, and why the cup differs
The flavour gap is not mystical. It tracks three measurable things.
Caffeine. Robusta green beans run about 2.2–2.7% caffeine by weight against Arabica’s 1.2–1.5% — roughly double.23 Caffeine is bitter, and it is also an insecticide the plant makes for itself, which is why the tougher species is also the harsher one.
Sugar and fat. Arabica contains almost twice the concentration of sugar and about 60% more lipids than Robusta.3 Sugars are what caramelise in the roaster into sweetness; lipids carry aroma compounds and body. Arabica simply starts with more of both raw materials.
What that adds up to on the table. Industry descriptions are consistent across brand, blog and roaster sources: Arabica reads sweeter, brighter, more fruity or floral, with higher acidity — “acidity” here meaning the bright citric snap prized in a good washed coffee, not sourness. Robusta reads more bitter, earthy or woody, with nutty and dark-chocolate notes and little of that brightness.345
Which is why the cupping forms differ. The Arabica sheet rewards acidity; grading Robusta on it is like marking a stout on crispness. CQI’s Robusta form replaces those boxes with Salt/Acid and Bitter/Sweet — see Fine Robusta for the full sheet, and Cupping for the method both sit on top of.
Where each one will grow
Arabica wants higher ground and cooler tropical air; Robusta thrives lower, hotter and more humid, and shrugs off pests and disease that flatten Arabica.45 That single fact explains the world map of coffee: Arabica in the highlands of Ethiopia, Colombia, Guatemala and the Brazilian plateau; Robusta in the lowlands of Vietnam, Indonesia, Uganda and the Brazilian north.
Processing follows the same logic. Arabica is routinely washed, honeyed or carefully dried as a natural; almost all Robusta is dried whole in the sun, because wet mills are capital the commodity Robusta trade has never had reason to spend.
To verify — the altitude bands everyone quotes
“Arabica above 800 m, Robusta below 800 m” is repeated constantly in trade writing, but no source consulted for this note states a numeric altitude range for either species, and the research report behind it says so explicitly. This wiki’s Robusta note reached the same dead end on the commonly quoted 200–800 m figure. “Lower than Arabica” is safe; a number is not.
To verify — the plant heights are in open conflict
Trade sources give cultivated heights of roughly 2.5–4.5 m for Arabica and 4.5–6 m for Robusta — Robusta the taller plant.46 But Wikipedia’s species pages, describing wild and unpruned plants, give 9–12 m for Arabica1 and about 10 m for Robusta2 — near-identical, and both far taller. The likeliest explanation is that the two sets measure different things (pruned farm plants vs wild trees), but no source consulted says so. Do not quote either pair as “the” height of the species.
How much of the world each one is
This is the number most often stated confidently and least often sourced. The best figure available here is a primary one from the International Coffee Organization, which publishes world trade statistics. For the twelve months ending May 2026, ICO reports Arabica exports of 81.84 million bags against Robusta exports of 59.28 million bags — about 58% Arabica to 42% Robusta. Arabica fell year-on-year (from 84.84 million bags) while Robusta rose (from 53.41 million).7
That direction of travel matters more than the ratio. Robusta is gaining share.
To verify — three different splits are in circulation, and they don't reconcile
The ICO figure above is exports, not production, and the two are not the same number. Against it: the research report for this note gives 60–70% Arabica / 30–40% Robusta, sourced to a coffee blog and a Nespresso page.48 Wikipedia’s Coffea arabica page says Arabica is “about 60% of global production,”1 while its Coffea canephora page says Robusta is “around 45%” (and 46% elsewhere on the same page)2 — the two Wikipedia pages together add to 105%, so at least one is wrong. This wiki’s Robusta note already carries the 45–46% figure with a warning attached, and that warning stands. A fourth figure has since been fetched for the Robusta note: Sprudge, citing World Coffee Research, gives Robusta as “a little more than 40% of coffee grown worldwide” — which sits close to the ICO export ratio and makes the blog-sourced “30–40%” the weakest reading of the four.9 Treat only the ICO export figure as sourced. The production split is genuinely unsettled in the sources reachable here; USDA’s Coffee: World Markets and Trade, which would settle it, has blocked automated access on every attempt this wiki has made.10
What each is worth
Robusta is cheaper. That much is not in dispute — it is easier to grow, yields more per hectare, and is bought as an interchangeable commodity rather than as a lot from a named farm. Robusta trades on its own ICE Futures Europe contract, quoted in US dollars per tonne and deliverable from any origin; Arabica trades on the separate “C” contract — see C-market. Origin-blind pricing is precisely the structure that specialty auctions and premiumisation exist to escape — see Robusta for the contract specifications.
To verify — "half the price" is a blog figure, not a market figure
The claim that Robusta green beans cost about half what Arabica does comes from a single retailer blog,6 with a second brand page saying only that Robusta is “less expensive.”5 Neither is a market source. ICO publishes group indicator prices (Colombian Milds, Other Milds, Brazilian Naturals, Robustas) that would settle the ratio precisely, but those group figures were not retrievable from ICO’s public pages here — only the composite indicator, which averaged 248.90 US cents/lb in June 2026 across all four groups.7 The gap is real and large; the specific multiple is unverified.
Which one the competitions are for
Almost every mechanism specialty coffee uses to reward quality was built around Arabica.
The 80-point line that marks specialty grade belongs to the Specialty Coffee Association’s Arabica form (see Coffee scoring). Cup of Excellence, run by the Alliance for Coffee Excellence, and Best of Panama, run by SCAP, are Arabica competitions — the record-setting lots are Arabica varieties like Geisha, grown at altitude on named farms such as Hacienda La Esmeralda and Elida Estate. There is no Robusta Cup of Excellence and no Robusta Best of Panama.
Robusta’s only formal quality route is Fine Robusta, CQI’s separate standard: its own cupping form, its own 80-point threshold, and green-bean rules strict enough that most Robusta fails on appearance before anyone tastes it. The people who apply it hold a separate licence — the R Grader, distinct from the Arabica Q Grader (see Q Grader).
The consequence is a hole in the record, and this wiki has hit it repeatedly: there is no verified auction price, competition placing or named buyer for any Robusta lot anywhere in these notes — the same gap the Liberica page documents, for the same reason. The standard exists; a public price-discovery mechanism around it does not.
Where they came from
Arabica’s wild populations are restricted to the forests of South Ethiopia, South Sudan and Yemen1 — which is why Ethiopia is described as the birthplace of the species and why its landrace varieties still hold genetic diversity no farm elsewhere can match. Robusta grows indigenously from Liberia to Tanzania and south to Angola,2 a broader and lower-lying African range, and has since naturalised across Southeast Asia and parts of the Americas.
To verify — the name "Arabica"
Nespresso states that the name is thought to have arisen when coffee travelled from Ethiopia to Arabia in the 7th century.4 That page could not be read directly (the fetch timed out), the claim is presented there as interpretive history rather than documented event, and no primary source for a 7th-century date was found. Treat it as a commonly repeated tradition, not an established date.
Why it matters
The comparison is usually taught as a quality lesson — Arabica good, Robusta bad, buy the bag that says 100% Arabica. That framing is getting less useful every year.
Arabica is the fussier species on precisely the axes that climate change is moving: it wants cool nights, high ground and a narrow temperature band, and it has almost no defence against Coffee leaf rust without genes borrowed from the other species. Robusta already produces reliably at the temperatures and altitudes that origins built for Arabica are drifting toward, and ICO’s own export numbers show its share rising.7
So the open question is not which species tastes better today — that one is settled. It is whether Robusta’s reputation is a farming-and-processing failure or a botanical ceiling. Fine Robusta, Brazil’s clonal breeding programmes and a slow trickle of single-origin Robusta on specialty menus are all bets on the first answer. Nothing in this wiki’s record settles it yet.
