Espresso

Espresso is coffee brewed by forcing hot water at high pressure through a tightly packed bed of finely ground coffee, producing a small, thick, concentrated drink under a tan foam layer called crema.

The single most useful thing to understand about it is what it is not. Espresso is not a bean, not a blend, and not a roast level. The Smithsonian puts it flatly: “espresso is not a roasting method. It is neither a bean nor a blend. It is a method of preparation.”1 Any coffee from any origin at any roast can be pulled as espresso, provided the grind, dose and timing are adjusted to suit it.1 A bag labelled “espresso beans” is telling you what the roaster expects you to do with it, not what is in the bag.

The numbers

There is one widely reproduced technical definition, published by the Italian company Illy and repeated in both sources consulted here.21 An authentic Italian espresso is:

Those figures describe a single shot. Doses scale in whole units from there: roughly 14 g for a double (doppio) and 21 g for a triple.2 In practice almost every specialty café serves doubles by default, so “a shot” in ordinary conversation usually means the 14-gram version.

Two features follow from squeezing that much coffee into that little water. The drink carries a far higher concentration of dissolved and suspended solids than any gravity-fed brew, which is where its weight and intensity come from — the same measurement the wiki’s Total dissolved solids note describes.2 And it is denser in caffeine per millilitre than drip coffee while containing less caffeine per serving: about 65 mg in a 30 ml espresso against roughly 95 mg in a 240 ml cup of drip.2 The “espresso is stronger” instinct is correct about concentration and wrong about dose.

To verify

The modern specialty recipe — 18–20 g in, 36–40 g out. Contemporary specialty bars almost universally pull a double at around 18–20 g of dry coffee for 36–40 g of liquid, a 2:1 ratio far larger than Illy’s seven grams. The research report behind this note states this is common practice but could not find a codified primary standard for it, and neither could this note. The Specialty Coffee Association does list an espresso-machine standard — SCA-350, “Semi-Automatic and Automatic Espresso Machines: Specifications and Test Methods” — but it sits behind member login and publishes no public dose, yield or pressure figures.3 Treat 18–20 g in / 36–40 g out as the specialty consensus, not as a rule anybody published.

Why the pressure matters

Nine bar is roughly nine times atmospheric pressure, and it is the number that separates espresso from strong coffee. Pressure that high does three things ordinary brewing cannot: it drives water through a bed so fine that gravity alone would barely penetrate it, it finishes the job in under half a minute, and it emulsifies the coffee’s oils into a colloid — the crema.2

That in turn makes espresso the most grind-sensitive brew there is. A grind a fraction too coarse and the water races through under-extracted and sour; a fraction too fine and it stalls, over-extracts and turns bitter. Because the whole shot is over in 25 seconds, there is no margin to correct mid-brew — which is why grinder quality and bean freshness matter more for espresso than for any other method, and why the extraction and ratio dials are set before the shot rather than during it.

The machinery that generates the pressure — steam boilers, Gaggia’s spring lever, the Faema E61 pump, modern pressure profiling — has its own note: Espresso machine.

Crema

Crema is the tan-to-hazel foam that sits on a fresh shot: emulsified coffee oils plus dissolved carbon dioxide, whipped into a colloid by the pressure.2 It is the visual signature of the drink and appeared only when Achille Gaggia’s lever machine pushed brewing pressure into the 8–10 bar range after the Second World War.

Crema is read as a rough quality signal, but it is a soft one — it reports as much about roast level and bean freshness as about the shot itself. Dark roasts and fresh, gassy coffee both produce abundant crema regardless of whether the extraction underneath is any good.

To verify

Reading quality from the crema. The research report describes a smooth, velvety crema with lighter “tiger-stripe” marbling as the mark of a well-extracted shot and good roasting, and a thick, very dark crema as a sign of over-roasting or over-extraction.4 This comes from a single culture blog with no measurement behind it, and it is not corroborated by the technical sources here. Stated as a claim, not as fact.

Where it came from

Espresso emerged in Italy around the turn of the twentieth century as a way to serve coffee on demand, one cup at a time, instead of brewing a pot and letting it sit.21 The name comes from the Italian esprimere — to press out — and carries the second sense of something made expressly, on the spur of the moment, for you.21 Both readings are in the word, which is why sources describing it as “fast” and sources describing it as “pressed out” are not actually disagreeing.

The public debut of the phrase is well dated: at the 1906 Milan fair, Luigi Bezzera and Desiderio Pavoni exhibited their machine under a sign reading “caffè espresso” — one of the first espresso bars, and the moment the drink got its name in front of a crowd.1 Pavoni marketed the machines on the promise of coffee “made on the spur of the moment.”1

From there the arc is: bitter, steam-brewed espresso through the first half of the century; crema and genuine high pressure after the war; espresso bars as the centre of Italian social life through the post-war boom; then global export from the 1980s and 1990s on the back of Italian emigration and the coffeehouse chains, above all Starbucks.2 The third wave later pulled the drink back apart, replacing the fixed dark-roast house blend with single-origin espresso and measured, tunable recipes.

To verify

Three dates in the invention story that the sources do not agree on. The full machine history lives in Espresso machine, but the conflicts are worth recording here because this wiki already states one of them differently:

  • Pavoni’s commercialisation. Wikipedia’s Espresso article and the research report both give 1905;2 Wikipedia’s Espresso machine article, which this wiki’s Espresso machine note follows and confirmed by fetch, gives 1903 for Pavoni buying Bezzera’s patent and founding La Pavoni. Buying the patent and shipping product are plausibly different events, but no source consulted here says so explicitly.
  • Gaggia’s lever. The Espresso article dates Achille Gaggia’s lever-piston mechanism to 1947;2 the research report gives 1947–1948 for invention and commercialisation; this wiki’s Espresso machine note carries an unresolved 1938 vs 1945 patent conflict. All agree the machine reached cafés just after the war.
  • Moriondo’s medal. The report states that Angelo Moriondo presented his 1884 steam machine at the Turin General Exposition and won a bronze medal. That detail appears only in secondary blog accounts and is not in either source fetched here.

Espresso in the café

Espresso is rarely the finished product. It is the base layer underneath most of a café menu: add steamed milk in different proportions and you get the flat white, the latte, the cappuccino and the macchiato; add hot water for an americano; pour it over ice for iced drinks. Varying the yield off the same dose gives a ristretto (shorter, sweeter, more concentrated) or a lungo (longer, thinner, more extracted).

This is why espresso, not filter, is the thing a barista is judged on. It is the fastest brew method and the least forgiving, it has to be repeated hundreds of times a shift to the same standard, and — as the Flat white note puts it — in a small milk drink the shot has nowhere to hide. It is also the centrepiece of the World Barista Championship, where competitors serve an espresso course, a milk course and a signature drink to judges.

The green coffee underneath is ordinary specialty green coffee: the auction lots, grades and cupping scores that this wiki records are attached to coffee lots, not to espresso as a format. A lot that scores 90 at the cupping table is not an “espresso lot” — it is a coffee that someone may choose to pull as espresso.
