Coffee freshness and degassing

Fresh coffee is not the same thing as newly roasted coffee. A bag opened the day it was roasted usually brews worse than the same bag opened a week later — thin, sour, foamy, hard to pin down. The reason is a gas, and waiting for it to leave is called resting.

This note covers the whole arc: what leaves the bean after roasting, how long the wait should be, and what happens at the other end when the coffee has waited too long.

What degassing is

Degassing — sometimes written off-gassing — is the slow escape of carbon dioxide (CO₂) from roasted beans. It starts the moment the beans leave the roaster and carries on for days, sometimes weeks.123

The gas is made during the roast itself. The heat that browns the bean also drives chemical reactions that produce large volumes of CO₂, and the bean’s honeycombed internal structure traps most of it inside.21 A roasted bean is, in effect, a tiny pressurised sponge. Cracking the bag open on day one and you can often smell it going.

Two things follow, and they are the whole practical story:

  • The gas gets in the way of water. CO₂ coming out of the grounds pushes brew water away from the coffee it is meant to be dissolving. In a pour-over this shows up as the bed puffing up into a dome — the “bloom”. In espresso it shows up as a shot that gushes, channels and tastes sour, because the puck is fizzing while the pump is pushing.
  • The coffee gets more soluble as the gas leaves. With less CO₂ in the way, water reaches the solubles more evenly, and the sweetness and clarity that were being masked come through.1 This is the same extraction machinery described elsewhere in this wiki, just with an obstacle removed.

The release is not steady. A large share of the gas leaves in the first 24 to 72 hours, and what remains trickles out far more slowly over the following days and weeks.2 That front-loaded curve is why the first few days matter disproportionately and why day 9 and day 12 taste much more alike than day 1 and day 4 do.

Rest whole beans, never ground

Grinding shatters the bean into thousands of pieces and multiplies its exposed surface enormously. That accelerates degassing and oxidation at the same time — the gas you wanted to keep for a while rushes out, and the oxygen you never wanted rushes in.1 This wiki’s Coffee grinding note records the same thing from the staling side: ground coffee deteriorates faster than whole beans purely because of surface area.

So resting is something you do to whole beans, in the bag. Grind immediately before you brew.

How long to wait

Here is where honesty is required: there is no standard. These are working recommendations from roasters and educators, and they disagree with each other. Read them as neighbourhoods, not settings.

The consistent shape across all of them: espresso needs longer rest than filter. Espresso forces water through a compacted bed at nine bars in under half a minute, so residual gas has nowhere to go and wrecks the shot. A filter brew is far more forgiving and can be drunk younger.

Roast level pulls the other way. Hoffmann’s guidance is that darker roasts need less rest — often around two days — and lighter roasts need more, which is consistent with what Coffee roasting already records about dark roasts having more broken-down cell walls: a more porous bean lets its gas go sooner.4

Two useful habits sit underneath all of this: buy by roast date, not expiry date, and buy small amounts often, so the coffee is fresh enough to be good without being so fresh that it has to sit on your shelf degassing.3

To verify — the day counts are practitioner guidance, and the sources contradict each other

No standards body defines a rest period. The Specialty Coffee Association publishes standards for cupping, grinders, brewers and espresso machines but none for post-roast resting, so there is no authority to appeal to and no way to call any of the ranges above wrong.

They also disagree in ways worth naming. Escondido gives filter as 4–10 days in one section of the same page and a practical minimum of 3–5 days in another.3 Espresso runs 7–14 days in two sources and 7–21 days in a third.123 The Escondido and Achilles ranges are numerically identical, which means they may not be independent evidence at all — two roaster blogs repeating a common figure count as one source, not two. Hoffmann’s numbers come from an educational YouTube video that could not be fetched and checked here; they are recorded above as reported.4

Treat the shape as reliable — wait a few days, wait longer for espresso, wait longer for light roasts — and treat every specific number as one roaster’s house opinion.

The peak, and the decline

Beyond the minimum rest, some roasters argue coffee does not merely become acceptable but climbs to a genuine peak before falling away.

To verify — the "washed peaks at day 7, naturals at day 11" timeline

A widely shared field note from Day9 Coffee lays out a day-by-day curve: days 0–3 too gassy to brew well; days 4–7 opening up, with washed coffees often peaking around day seven; days 8–11 the peak window, with naturals peaking nearer day eleven; days 12–18 a slow decline that is still good but losing complexity; day 19 onward flat and generic.5

The page was read directly and does say this. But it attributes the underlying work to the SCA and the Coffee Excellence Center at ZHAW in Zurich without a readable primary document, and it cites one peer-reviewed paper on volatile loss in stored coffee that returned HTTP 403 and could not be checked from here.6 So this is a secondary summary of research that was not verifiable at the source: no experimental design, sample size or statistics are visible. The washed-versus-natural split is a plausible and often-repeated claim, not an established finding.

To verify — a roaster's claim of two separate flavour peaks

Sweet Blossom Coffee reports that its light roasts have two peaks rather than one: a first around 11 days, where flavours read in broad categories — berries, floral, tropical fruit — and a second at 17–22 days, where more specific notes emerge, the page naming blueberry and sakura as examples.7 The same roaster advises drinking espresso within 40 days of roast, after which crema thins out and the texture goes light.7

This comes from one roaster’s internal cupping. No panel size, protocol or scores are given, and the claim that flavour resolution increases over two and a half weeks runs against the more common view that complexity is lost after roughly two weeks — including the Day9 timeline above.5 Recorded here because it is a specific, falsifiable claim from a named roaster, not because it is settled.

At the far end of the curve the enemy changes. Early on the problem is too much CO₂; late on it is oxidation and aroma loss — oxygen reaching the coffee’s fats and volatiles, and the aromatics simply evaporating away. That is staling, and unlike degassing it never improves anything.

Storing coffee while it rests

The agreed advice is dull and correct: keep beans whole, in an airtight or well-resealed container, somewhere cool, dry and dark, away from sunlight, the oven and the kettle.13 Warmth speeds both degassing and staling; a stable, cool cupboard slows both.1 If the bag has a one-way valve, press the air out before resealing it.7

To verify — temperature and freezing figures from a source that could not be fetched

European Coffee Trip’s science guide is reported to state that aroma loss roughly doubles for every 10 °C rise in temperature, and that brief exposure above 50 °C can seriously damage a coffee’s aroma. The same guide reportedly recommends freezing in well-sealed bags rather than valved ones — because a one-way valve does not work properly in the cold, degassing having nearly stopped — and letting a frozen 250 g bag warm for at least an hour, a 500 g bag for at least two hours, before opening, so condensation forms on the outside of the bag rather than on the beans.8 The page returned HTTP 403 and could not be read here, so all of it is recorded as reported rather than confirmed.

Separately, Methodical Coffee states that freezing significantly slows both degassing and oxidation and can extend a coffee’s useful life if the packaging and thawing are handled properly.1 No source found here gives quantitative frozen-versus-ambient comparisons — no “X% of CO₂ retained after Y days” figure exists in this research.

Cupping is the deliberate exception

If drinking coffee wants a week of rest, it is worth asking why cupping does the opposite. Under the SCA cupping protocol, samples must be roasted 8 to 24 hours before they are tasted — barely rested at all.

That is not a contradiction; it is a different job. Cupping is not trying to make the best possible cup, it is trying to compare many coffees under identical conditions. Rest time is one more variable, so the protocol nails it down in a narrow window and moves on. A coffee that scores 88 on the cupping table has been assessed at roughly one day old, and the bag you buy is meant to be drunk at roughly one week old. Both are correct for what they are doing.

Where this sits

Degassing is the hinge between the roastery and the kitchen. It is the reason a bag carries a roast date at all, the reason specialty bags have one-way valves instead of being vacuum-sealed shut, and the reason a shop cannot ship a coffee the hour it comes out of the drum. For anyone dialling in, it is also the most common invisible explanation for a recipe that worked yesterday and does not today: nothing changed except the coffee got older, which means it got more soluble, which means the same grind now over-extracts.
