Brew ratio
The brew ratio is the amount of dry coffee set against the amount of water — the first decision in any recipe and the one that most directly sets how strong the finished cup tastes.
It is written two ways, and they read in opposite directions, which trips people up constantly:
- Filter style — coffee first.
1:16means one gram of coffee for sixteen grams of water. Bigger second number = weaker cup. - Espresso style — output first.
2:1means the shot weighs twice the dry dose: 20 g of grounds in, 40 g of liquid out. Bigger first number = longer, weaker shot.
You will also see filter ratios flipped into “water:coffee” form, so 1:16 becomes 16:1. Same recipe, and context tells you which is meant — nobody brews filter coffee at sixteen parts coffee to one part water.
Mass or volume?
In practice, both sides are weighed on a scale in grams. Wikipedia’s definition is looser, describing the ratio of coffee “mass, in grams or ounces” to water “volume, in liters or half-gallons.”1 The two barely differ, because a millilitre of water weighs almost exactly a gram — so 1:16 by weight and 1 g per 16 ml are the same recipe for any practical purpose.
Weighing is still the better habit. Ground coffee varies enormously in density with roast level and grind, so a scoop of light-roasted coffee and a scoop of dark are not the same dose at all. That is why measuring by volume is treated as the fallback rather than the method.
What the numbers do
Brew ratio does not work alone. It sits in a fixed relationship with the other two brewing numbers, which Wikipedia states as a proportion: Strength ∝ Brew ratio × Extraction.1 In words — the concentration of the drink is set by how much coffee you started with and how thoroughly you dissolved it.
The practical consequence is that ratio is the strength dial and extraction is the flavour-development dial, and they are only semi-independent. Scott Rao puts the constraint precisely: “each particular combination of EY and TDS can only be achieved by a unique brewing ratio.”2 If you know the two numbers you want, the ratio is not a choice any more — it is arithmetic.
This matters most in full-immersion brewing. As this wiki’s Total dissolved solids note records, research on French-press-style brewing found extraction staying roughly fixed while strength moved inversely with the ratio — which makes brew ratio the controlling parameter for immersion, not one lever among four.

The two filter figures above are the same recipe expressed differently — 60 g per litre and 1:16 land within a rounding error of each other, which is a decent sign that the specialty consensus for filter really does cluster around one-to-sixteen-ish.
The espresso figure holds across independent sources. Urnex describes a barista who “starts with a 2:1 brew ratio – so to produce 40 grams of liquid espresso, he’ll begin with a 20 gram dose,”4 and Rao refers to 2:1 for espresso and 17:1 for filter as the “standard, popular ratios.”2
Rao’s larger point, though, is that these are defaults to depart from rather than targets. He lists what should actually drive the decision: the strength and extraction you want, how much channelling risk your puck preparation carries, the bed depth your equipment brews best at (he gives 3–5 cm for batch brew and a 15–22 g dose for a V60), whether you want mild under-extraction to mask a defect, and the drink size you are building — a milk drink and a straight shot want different shots.2
Blooming
Manual brewing usually starts with a bloom — a small pour that wets the grounds and lets trapped carbon dioxide escape before the main pour. Fresh Cup describes the working convention as roughly double the dose by weight: “if they’re brewing with 30 grams of coffee, the bloom is usually about 60 grams of water.”3 That bloom water counts toward the total, so it comes out of the recipe rather than being added on top.
To verify
The commonly quoted 15–18:1 filter range. The research report behind this note attributes a 15–18:1 water-to-coffee band to Wikipedia and to SCA-style guidance. Fetching the Wikipedia page directly did not surface that range — what it gives instead is “approximately 14–16 grams of coffee for a standard 240 ml cup,”1 which works out to roughly 15:1 to 17:1. Overlapping, but not the same claim, and the Specialty Coffee Association’s public standards page publishes no numeric brewing values at all.6 Treat 15–18:1 as a fair summary of common practice, not as a quotable standard.
To verify
Counter Culture’s 1:17 and the tablespoon rule. The research report cites Counter Culture Coffee recommending 1:17 as a broad manual-brewing standard, and, for anyone measuring without a scale, 1 tablespoon of coffee per 4 ounces of water.7 The page returned a rate-limit error when fetched here, so neither figure was confirmed at source. The volumetric rule in particular should be read as a rough stand-in — a tablespoon of coffee is not a fixed mass.
To verify
Cold brew at 1:5. A single brewing-calculator site describes cold brew concentrate as typically around 1:5 coffee to water, diluted about 1:1 with water or milk before serving.5 No second source and no fetch confirmed it, and cold brew recipes vary far more widely than hot-brew ones. Directional only.
