Coffee grinding

Grinding is breaking roasted coffee beans into particles so that water can get at what is inside them. A whole bean brewed in hot water gives up almost nothing; the same bean cracked into thousands of pieces gives up plenty. Everything interesting about grinding follows from that one idea.

The particle size is called the grind size, and it is usually described either in words — fine, medium, coarse — or in microns. A micron is a thousandth of a millimetre,1 so a “600 micron” grind is 0.6 mm across, roughly a grain of sand.

Why finer extracts faster

Cut something into smaller pieces and you create more surface. Coffee is dissolved from the outside in, so more surface means water reaches more of the coffee at once and pulls it out faster. Counter Culture Coffee puts it plainly: “the finer coffee is ground, the more surface area is exposed, granting water easier access to coffee’s soluble materials.”2 Café du Monde’s technical guide says the same from the other side — grind size “directly affects the rate and efficiency of extraction.”3

That gives the rule every brewing chart is built on, which Wikipedia states outright: “brewing methods that expose coffee grounds to heated water for longer require a coarser grind than faster brewing methods.”4 An espresso shot has about 25–30 seconds with the water, so it needs a very fine grind to get anywhere. A French press has four minutes, so a fine grind would blow straight past the point you wanted and keep going.

Grind is one of four levers on extraction — alongside water temperature, contact time and agitation — but it is the one people reach for first, because it is the only one you can change without changing the recipe. Turn the grinder finer and extraction goes up; the ratio and therefore the strength stay exactly where they were.

The grind chart

Published grind charts all follow the same shape. Here is one, from a grinding guide read in full for this note:1

Turkish coffee sits off the bottom of the fine end — finer than espresso, closer to flour. Wikipedia notes it is traditionally made by “pounding the beans with a mortar and pestle,” which “can pulverise the coffee finely enough” for the style.4

Read these numbers as a starting neighbourhood, not a setting. See the callout below: no standards body publishes them, and charts disagree with each other by a hundred microns or more.

Evenness beats the number

The dial setting is only half of it. What actually comes out of a grinder is a spread of particle sizes, and the tighter that spread, the better the cup — because every particle is extracting at its own rate. Wikipedia’s version: “a uniform grind produces a more even extraction when brewed, without excessively fine particles that clog filters.”4 The failure mode is described the same way everywhere — some particles over-extract and turn bitter while others under-extract and stay sour, and you taste both at once in the same mouthful.13

This is why the grinder matters more than almost any other piece of brewing equipment, and why the three types are not interchangeable:4

  • Burr grinders use “two revolving abrasive elements, such as wheels or conical grinding elements made of stainless steel or ceramic, between which the coffee beans are crushed.” The gap between the burrs sets the size, so the output is comparatively uniform, and the range of settings covers “espresso, drip, percolators, French press, and others.” Burrs come as conical (usual in hand grinders) or flat wheel.
  • Blade grinders chop with a blade spinning at 20,000 to 30,000 rpm. They are cheap, they produce inconsistent particle sizes, and they are “best suited for drip coffee makers” — not espresso. A blade grinder does not have a grind size, only a length of time you ran it for.
  • Roller grinders, used only at commercial scale, crush beans “between pairs of corrugated rollers” and give “a more even grind size distribution” while heating the coffee less than the alternatives.

The Specialty Coffee Association does publish a grinder standard — SCA-320, Home Coffee Grinders: Specifications and Test Methods — sitting alongside its standards for home brewers and espresso machines. It is a published standard available to members.5

Grind late

Ground coffee goes stale much faster than whole beans, for the same reason it extracts faster: “ground coffee deteriorates faster than roasted beans because of the greater surface area exposed to oxygen.”4 The surface that lets water in also lets oxygen in. This is the whole argument for grinding immediately before brewing rather than buying pre-ground — and, as Coffee freshness and degassing covers, the reason coffee is rested as whole beans.

Reading the cup and correcting

Grind is the adjustment you make when a brew tastes wrong but the recipe was right. Counter Culture Coffee gives both directions:2

  • Harsh, bitter, mouth-drying, ashy aftertaste → likely ground too fine. You over-extracted; go coarser.
  • Weak, sour, papery → likely ground too coarse. You under-extracted; go finer.

This maps onto the 18–22% extraction band that Counter Culture also cites, with above 22% turning harsh and bitter and below 18% turning sour.2 This wiki’s Extraction yield note carries the fuller story of where that band comes from and how firmly it is actually documented.

Two adjustments go beyond the brewer and back to the coffee itself, both from Counter Culture:2

  • Grind finer for high-elevation coffees. Beans grown high are denser, so water has a harder time getting into them.
  • Grind coarser for darker roasts. “The darker the roast on a coffee, the more its cellular structure is degraded, making it less dense” — so it gives up its solubles more readily and needs less help. That agrees with what this wiki’s Coffee roasting note already records about dark roasts being more porous and faster to extract.

To verify

The micron numbers themselves. The table above comes from a single retailer’s guide, read directly.1 It is one chart among many that do not agree. The research report behind this note attributes different bands to other guides — espresso at 200–300 microns, pour-over at 400–600, French press at 800–1000 and cold brew at 1000–1500 from one grinding blog,6 and espresso at about 0.3 mm from a MasterClass chart7 — and the report also mis-transcribes its own primary source, listing pour-over at 400–600 and AeroPress at 300–400 where the page actually gives 400–750 and 400–600. Two further chart sources could not be checked here: MasterClass returned HTTP 4037 and Drink Trade returned HTTP 429.8 More importantly, the Specialty Coffee Association’s standards list contains no standard for grind particle size or particle-size distribution, published or in development5 — so there is no authority to appeal to. Treat any micron figure in this wiki as a rough band from one commercial guide.

The cupping grind is a written standard, but not a public one. Cupping samples are prepared under SCA-102, which is published but available only to SCA members,5 so the actual grind specification could not be read here. The 750–1000 micron figure in the table above is a coffee retailer’s grouping of cupping with French press,1 not the SCA’s own wording.

To verify

“Fine equals bitter, coarse equals sour” as a diagnostic. The correction table above is the standard teaching heuristic and it is repeated by both sources read here.23 It is trainer’s shorthand rather than a controlled sensory finding, and this wiki’s Extraction yield note flags the same rule for the same reason. Roast level, water and the particular coffee all move where those thresholds sit — which is exactly why the same note’s elevation and roast-level adjustments exist.
