Terroir
Terroir is the claim that a coffee tastes the way it does because of where it came from. Same plant, different mountain, different cup. The word is French, from terre — earth — and coffee borrowed it wholesale from wine, where it has long described how climate, landform, soil and soil life shape a wine’s character.12
The short version: terroir is not one thing you can measure with one instrument. It is a bundle — altitude, temperature, rainfall, soil, shade, the variety planted, and the decisions the farmer makes — and the only place the bundle shows up as a single readable signal is in the taste of the finished coffee.31
That is also why the word gets abused. “Terroir-driven” appears on a lot of bags. What follows is the part that stands up: what the research actually says the bundle contains, how it proposes to measure it, and which popular numbers are shakier than they sound.
The one peer-reviewed definition
A 2022 review in the journal Foods — “Does Coffee Have Terroir and How Should It Be Assessed?” by Simon D. Williams, Bronwyn J. Barkla, Terry J. Rose and Lei Liu — is the closest thing coffee has to a formal definition. It proposes terroir as:
“the unique sensory experience derived from a single origin roasted coffee that embodies its source”
and, more mechanically, as everything that “affect[s] the growth of the coffee cherry and its conversion to a green coffee bean.”3
Two things in that wording matter. First, terroir is defined by the sensory outcome, not by a soil test — you know it by tasting it. Second, it runs all the way from the flowering tree to the green bean, which drags post-harvest work inside the definition in a way wine’s version of the word does not.3
The review is emphatic that no single factor is terroir. What produces it is “the unique combination of these parameters.”3 Agronomy literature reaches the same place from the other direction, treating cup quality as the output of biophysical site characteristics plus management decisions — a human-mediated agro-ecosystem, not untouched nature.1
What is actually in the bundle
Altitude, or temperature in disguise
Altitude is the number that ends up on the bag, but what it really stands for is how cold the nights are and how slowly the cherry ripens. Cooler air slows the fruit down; a slow cherry accumulates more sugar and develops more aromatic complexity than a fast one. That is the mechanism behind “high-grown” being shorthand for good.42
The Coffee Belt note covers the geographic version of this: near the equator, height above sea level substitutes for distance from it. Terroir is the same trade-off seen from the cup end.
The caution is that higher is not automatically better. The relationship bends — it depends on the variety, the soil, the rainfall pattern and whether the farm can actually pick and process cleanly at that altitude.42
To verify — the "0.6 °C per 100 m" and "nights below 15 °C" figures
A specialty-roaster technical article states that “every 100 meters of elevation typically reduces mean temperature by 0.6 °C” and that nights “cool enough to slow respiration (below 15 °C) allow cherries to retain the sugars produced during daytime photosynthesis.”4 The 0.6 °C figure is close to the standard atmospheric lapse rate and is plausible, but both numbers come from a single roaster’s blog, not from an agronomic standard or the peer-reviewed literature. The scientific review confirms that altitude, temperature and rainfall drive bean chemistry, but gives no universal numeric thresholds.31 Treat these as illustrative physics, not measured coffee agronomy. Climate — rainfall, and the day-to-night swing
Site climate has a large effect on both the chemical composition and the sensory attributes of the brewed coffee.1 Beyond average temperature, the factor practitioners talk about most is diurnal temperature range — the size of the gap between daytime warmth and night-time cold. Warm days let the plant photosynthesise and make sugar; cold nights slow the plant’s own respiration so it burns less of that sugar back off. A big swing therefore reads in the cup as sweetness and structure.4
Rainfall matters as timing, not just total: a wet season to trigger flowering, a drier one to ripen and harvest. Surrounding vegetation and shade cover sit in the same category — part of the microclimate the tree actually experiences.35
Soil and ecosystem — the weakest link in the evidence
Soil type, soil biodiversity, shade ecology and microbial life are all listed as terroir components, in coffee as in viticulture.145 They are also where the confident marketing outruns the science by the widest margin.
The Foods review states it flatly: “Plant nutrition to terroir correlations are inconclusive.” There is “no consensus in the literature on the specific impacts of tree nutrition on coffee bean quality,” and there are reports of limited effect of soils and fertiliser use on terroir.3
So “volcanic soil” as an explanation for a great cup is, on current evidence, an association rather than a demonstrated cause. Volcanic origins like Panama’s Boquete slopes and Cerrado Mineiro are also high, cool and well-drained — and those things are documented drivers.
Variety — the receiver, not the signal
The same cultivar tastes different in different places, and different cultivars in the same place taste different from each other. The review treats variety selection as one of the core terroir factors, alongside environment and management.3 One practitioner framing puts it neatly: “The variety is the receiver; terroir is the transmission.”4
That is why Geisha planted at 1,700 m in Boquete is not the same coffee as Geisha planted low and warm, and why Bourbon, SL28 and Geisha on adjacent hillsides give three different cups. Genetics set the ceiling; place decides how much of it you get.
Terroir is also the standard answer to a fair question — how do so few species produce such a wide spectrum of flavour? Arabica and Robusta account for nearly all of it, and terroir is much of what fans that narrow genetic base out into hundreds of distinguishable coffees.5
Farming — the human half
Shade management, fertilisation, pruning, harvest timing and how selectively the cherry is picked are all inside the definition, not outside it.3 The review notes that the maturation rate of the cherry and bean is greatly affected by environmental and agricultural factors together, and those feed straight through to sensory attributes.3
This is the part people forget when they treat terroir as something a farm passively has. A poorly picked lot from a perfect microclimate cups worse than a carefully picked one from an ordinary hillside — see Selective picking.
The coffee-specific twist: processing counts
Here coffee genuinely departs from wine. The Foods review argues that post-harvest processing can be considered part of coffee terroir, on the grounds that “the post-harvest processing of coffee often occurs under uncontrolled environmental conditions” and that environmental factors often determine how the cherry is processed.3 Where water is scarce, you get natural coffee; where it is abundant and mills exist, you get washed. The method is not a free choice — it is partly dictated by the place.
Worth being precise about the strength of that claim: the paper proposes this and asks that “consideration should be given to whether coffee terroir encompasses this step.”3 It is a reasoned position in the literature, not a settled industry definition.
Practitioners describe the two as working in tandem — terroir sets a coffee’s baseline structure, acidity and underlying flavour, and processing amplifies or filters what is already there.6
That framing is exactly what makes modern processing contentious. When an extended anaerobic or carbonic maceration lot arrives tasting overwhelmingly of the tank, critics ask whether the process is revealing the farm or burying it — the argument already running through Coffee fermentation and Anaerobic fermentation. On the Foods reading, a processing style forced by local climate and infrastructure is part of terroir; a deliberately engineered ferment is closer to authorship. The paper does not draw that line explicitly, and nobody has drawn it authoritatively since.
How you would actually measure it
The review’s answer to its own title question is a method, not a lab assay:
- Descriptive sensory analysis using the cupping method — i.e. Cupping, because it “provides a baseline experience to allow a fair comparison of coffee and its terroir.”3
- A medium-light roast, standardised at Agtron 65 on the SCA colour scale, so roast development does not drown the origin signal.3 See Agtron scale and Coffee roasting.
- Standardised roast level, grind size and brew method across every sample being compared.3
- The World Coffee Research Sensory Lexicon as the descriptor vocabulary — a set of 110 flavour, aroma and texture attributes with physical reference standards for intensity, developed at Kansas State University’s Sensory Analysis Center, with Lexicon 2.0 published in October 2017.7
In other words: hold everything downstream constant, and whatever still differs between two coffees is a candidate for terroir. Both numeric scoring and descriptive vocabulary can capture the difference.3 The same logic underpins the SCA cupping protocol, Coffee scoring and the newer Coffee Value Assessment, and the vocabulary reappears in the Coffee flavor wheel.
Where terroir shows up on this wiki
Terroir is the organising idea behind most of the origin notes here. It is why Yirgacheffe is discussed as jasmine and bergamot and citrus acidity while a Guatemalan highland coffee is discussed as chocolate and stone fruit and structured sweetness — the same practitioner comparison that sets Yirgacheffe, Huehuetenango and Boquete Geisha against each other as distinct environmental signatures.4
It is also the premise of the green-coffee competitions. Best of Panama and Cup of Excellence exist to find the lots where a specific farm, on a specific slope, in a specific year, produced something nobody else did — and the prices those auctions reach are the market putting a number on place. Direct trade and single-farm green buying are the commercial machinery built on the same assumption.
The review notes that terroir is most notable in single-origin coffees that represent their growing location — coffees sold as one place rather than assembled from several.3
To verify — "blends blur terroir"
The research report behind this note stated that blends blur the terroir signature. The Foods paper supports the first half — terroir is most legible in single-origin coffee3 — but a check of the paper found no discussion of blended coffees at all, so the claim about blending is an extension, not a finding. It is a reasonable inference and it is how the trade talks, but it is not sourced.
To verify — the specific coffees, scores and prices
The research report explicitly could not supply any cupping scores, auction prices, lot names, buyers or competition placements tied to a named terroir claim; it warned that such figures were absent from its sources and would have to come from primary auction and event records. Nothing numeric about individual lots should be read into this note. The verified competition figures live in Best of Panama results archive and Cup of Excellence records by country.
What terroir is not
- It is not a certification. No body owns the word, trademarks it or awards it. Unlike wine’s appellation systems, coffee has no legal terroir designation, which is why phrases like grand cru in coffee are marketing borrowings rather than titles — see Grand Cru Coffee. The nearest things coffee has to place-protection are the geographical indications — regional denominations of origin like Cerrado Mineiro’s.
- It is not a soil reading. As above, the nutrition-to-flavour link is unresolved.3
- It is not fixed. The environmental conditions that define a terroir are shifting — warming pushes viable Arabica uphill and changes the diurnal swing a given farm gets. A terroir is a description of a place at a time, not a permanent property of it. See Climate change and coffee.
