Anaerobic fermentation
Anaerobic fermentation means letting coffee ferment inside a sealed container with the air shut out. Instead of cherries or wet seeds sitting in an open tank breathing normal air, they go into a closed barrel or steel tank, and the only gas that can leave is the gas the fermentation itself makes.12
Sprudge puts the word plainly: anaerobic simply refers to the “lack of oxygen (an-aerobic)”.3 Barista Magazine says the same thing from the practical end — “anaerobic processing is a style of fermentation that happens without the presence of oxygen,” with the coffee in “barrels that are sealed off from the outside air”.4
Fermentation here is the stage after picking, where naturally occurring microbes eat the sugary fruit layer around the seed. It happens to every coffee whether anyone plans it or not.5 What is new is doing it on purpose, sealed, and watching the clock.
How the air actually gets shut out
There are two ways to end up with no oxygen in the tank, and producers use both:
- Let the microbes do it. Seal the vessel with the coffee inside. The microorganisms breathe the trapped oxygen, use it up, and pump out carbon dioxide in its place. The peer-reviewed name for this is self-induced anaerobic fermentation (SIAF) — the paper defines it as a process “in which microorganisms consume the available oxygen as part of their metabolism, releasing CO₂ and other volatile compounds”.6
- Push the air out yourself. Inject carbon dioxide into the vessel so it displaces the oxygen from the start. Sprudge describes oxygen being “removed by forcing carbon dioxide into the container”.
Either way, the tank fills with gas and pressure builds, so the vessel needs a one-way valve — a fitting that lets gas out but nothing back in. Ozone Coffee describes exactly the same fitting and where it comes from: “a sealed container fitted with an airlock (essentially a one-way valve, the same kit homebrewers use)”.7 Royal Coffee New York puts the vessel just as bluntly — “a sealed environment, like a metal drum or plastic container”.8
Worth noting that route 1 needs a little air to start with. Ozone points out that the water the coffee sits in “contains dissolved oxygen, and the air above it (before the lid goes on) contains more,” and that “that initial oxygen is actually needed” — the microbes have to grow before they can strip the tank. So a lot of coffee sold as anaerobic is not oxygen-free at the moment it is sealed; it becomes so.
The gear runs from cheap to laboratory-grade. Erwin Mierisch of Fincas Mierisch in Nicaragua told Sprudge he has had success with “Grainpro bags” and “blue plastic barrels” affordably, alongside high-tech “stainless steel tanks that can control temperature, pressure, and pH”. A sealed plastic drum with a valve is a real anaerobic fermentation; so is a €30,000 jacketed tank.
It is not a fourth processing method
This is the single most useful thing to know about anaerobic coffee, and the bit most bags get wrong.
Every coffee still has to have its fruit removed and be dried somehow — that is what natural, honey and washed describe. Anaerobic fermentation happens before or during that, and then the coffee finishes as one of those three. Barista Magazine states it directly: “This can be for natural, honey, or washed coffee”. The coffee going into the tank is “usually in cherry form (but it can also be pulped)”.

So “anaerobic” on a label tells you how the fermentation was run, not how the fruit came off. It is a modulation of an existing process, not a new category — which is why you see it stacked with another word almost every time.
Two words that travel with it: carbonic maceration and co-fermentation
Two other terms sit on the same shelf, and neither means quite the same thing as “anaerobic.”
Carbonic maceration is the wine borrowing, kept closer to the original. In wine it means whole grapes fermenting inside a carbon-dioxide-filled vessel — the fruit ferments from the inside out, still in its skin, before anything is crushed. Applied to coffee it means whole cherries, sealed, under CO₂. Royal Coffee New York draws the dividing line by what actually goes into the tank: for carbonic maceration “the coffee producer adds the whole cherry to the fermentation tank,” while for anaerobic fermentation “the producer adds mucilage-covered seeds to a sealed tank”. You will also see semi-carbonic maceration, used by Coffeester for lots that begin with some air still in the vessel rather than a pure CO₂ flush.
To verify
The industry does not agree on where “anaerobic” stops and “carbonic maceration” starts. Royal Coffee New York reserves anaerobic for depulped seeds and carbonic maceration for whole cherries. That directly contradicts the table above and the sources behind it: Barista Magazine says the coffee going into an anaerobic tank is “usually in cherry form,” and Ozone Coffee defines an anaerobic natural as coffee that “underwent anaerobic fermentation as whole cherries in a sealed tank, and was then dried as a natural”. Two of three sources put whole cherries under the anaerobic umbrella, so this note keeps that usage — but no standards body defines either term, and a bag saying “carbonic maceration” may mean the same tank as a bag saying “anaerobic natural.” Read the producer’s own protocol where one exists.
Co-fermentation is the other neighbour, and the contested one: adding something to the tank that did not grow on the coffee tree. Royal Coffee New York describes it plainly — “some producers add different spices or fruit, such as cinnamon or bananas. They mix these ingredients into the tank to impart their flavor onto the coffee”. A milder version stays within the crop: “in some cases, they add the pulp back into the tank and mix with the depulped seeds. Some farms mix the pulp of different varieties of coffee with the depulped seeds of another, attempting to increase the complexity”.
That is the line where the fermentation stops being a way of revealing the coffee and starts being a way of flavouring it, and it is the sharpest version of the terroir argument further down this page.
To verify
Co-fermentation is single-sourced here. Only Royal Coffee New York, a green-coffee importer’s blog, was found describing added spices and fruit and the pulp swap; no independent source consulted corroborates the practice, and no competition rulebook or trade-body position on added ingredients was located. Whether major auctions such as Cup of Excellence or Best of Panama admit, restrict or disqualify co-fermented lots is not established by anything in this wiki and should be checked against the competitions’ own rules before being stated either way.
Where it is done, and on what
Anaerobic lots are not concentrated in one country. Coffeester reports the technique “has been adopted most visibly in competition-circuit coffees and in micro-lot offerings from producers in Colombia, Panama, Ethiopia, and Costa Rica, among others”9 — and this wiki’s own verified records match that spread on at least two counts: Sidama lots in Ethiopia placed at Cup of Excellence 2021 with anaerobic and anaerobic-natural processing, and Carmen Estate in Panama is known for its fermentation regimes.
On varieties, the same source names Red and Yellow Catuaí under semi-carbonic maceration and notes the technique applied to “high-value varieties such as Gesha (also written Geisha)”. The wiki’s independently verified examples run to Ethiopian JARC 74158 and local heirloom selections rather than Geisha — so treat the variety list as where it shows up, not where it works best. Nothing in the sources suggests anaerobic fermentation is variety-specific.
What the sealed tank does to the coffee
Shutting out the air changes which microbes win.
Open-air fermentation favours oxygen-loving bacteria and wild yeasts. A sealed tank favours facultative anaerobes — organisms that get along fine without air — and in coffee that mostly means lactic acid bacteria, the same family that sours yoghurt and sourdough. The Foods study found SIAF “notably promoted glucose consumption and lactic acid production, associated with higher LAB populations,” with Weissella the dominant genus, “followed by Leuconostoc and Lactiplantibacillus,” and reduced yeast activity compared with semi-anaerobic conditions.
That paper also recorded something producers care about a lot: the sealed tanks ran cooler. Under SIAF “temperature remained near ambient (20 °C),” while semi-anaerobic fermentations climbed to 30–37 °C. Cooler and slower is the whole appeal — it buys time without the coffee running away.
More lactic acid, plus the esters and alcohols a fermentation throws off, is why these coffees taste the way they do. The reported flavour language is consistent across sources even though the wording varies:
- Barista Magazine: “a heavy body, and a winey/rum and raisin-like flavor, in addition to tropical fruit and notes of fermented cacao”.
- Gabriel Agrelli Moreira of Daterra, describing his first anaerobic cup: “super crazy flavours of tropical fruits like mango and papaya, super floral, with some alcoholic presence at the back – but all very pleasant”.10
- Erwin Mierisch on temperature as a dial: “In warmer fermentations, we find more intense notes like brown spices (cinnamon, clove, brown sugar being common), and in cooler fermentations (we ferment at 8-10C) we find a cleaner and vibrant acidity”.
The through-line: loud fruit, wine-like or spirit-like character, heavy body. These are sensory descriptions from tasters, not measurements — worth remembering when a bag promises them.
Why producers bother: time
The practical prize is a longer, safer fermentation. In an open tank, a long ferment is a gamble — spoilage organisms get in and the coffee turns. Sealed, that pressure eases: the method “allows for a longer fermentation phase to occur without the risks of overfermentation and unpleasant notes being added to the coffee, as could happen in an open environment”. MTPak makes the same point — it “provides producers with the flexibility to extend the fermentation timeline”.
“Safer” is not “safe.” Sealed tanks still go wrong: run them too warm or too long and you get excess alcohol, unwanted microbes and outright defects. Temperature, pressure, pH and time all still have to be watched, which is exactly why the expensive tanks have gauges for all four.
How long is “longer”? Every source consulted gives a different answer, which is itself the finding. Ozone Coffee says fermentation time “can range from as little as 12 hours to well over a week”. Coffeester reports “runs of 48, 72, or even 96 hours or more” against a conventional baseline of “8 to 36 hours”. And Royal Coffee New York describes experimental drums where “the coffee ferments in the drum for as long as three months”. The floors and ceilings do not line up, but the direction does: sealed tanks buy days and sometimes weeks where an open tank buys hours.
To verify
There is no standard time or temperature. Four sources give four overlapping-but-different bands — 12 hours to a week, 48–96 hours or more, up to three months in experimental drums, and 15–25 °C for 48 hours to several weeks11 — none citing a shared authority, and all. The Basic Barista’s temperature range also sits awkwardly beside the two specifics that are well sourced: the Foods study’s near-ambient 20 °C under SIAF, and Fincas Mierisch fermenting at 8–10 °C, below the quoted floor. No standards body publishes an anaerobic fermentation specification,12 so treat any stated range as one operation’s practice, not a definition.
Where it came from — and who gets the credit
The idea is borrowed from wine. In winemaking, carbonic maceration means fermenting whole grapes in a CO₂-filled sealed vessel; adapting that to whole coffee cherries is the direct ancestor of what happens in a sealed coffee tank today.
Who brought it across is genuinely disputed in the sources consulted.
To verify
Two different origin stories, from two different publications.
- Sasa Sestic, 2015. Sprudge says Sestic is “generally credited with porting this concept from wine to coffee, after being inspired by a winemaker” in Australia, and that he used a Colombian coffee processed by carbonic maceration — “oxygen is pushed out by CO₂” — at the 2015 World Barista Championship. Sprudge hedges with “generally credited,” and the claim was not corroborated here: World Coffee Events’ championship history pages returned HTTP 404, and the homepage of Sestic’s green-coffee company Project Origin does not mention him, the 2015 title, carbonic maceration or anaerobic processing at all.13
- Daterra and a Beaujolais winemaker. MTPak Coffee reports instead that Daterra in Brazil pioneered the technique after being introduced to it by a French winemaker from Beaujolais. Single-sourced; Daterra’s own site does not carry this account.
Both stories may be partly true — parallel adoption is normal — but neither is established, and no first date for anaerobic coffee should be quoted from this note.
To verify
Daterra’s “Frevo” lot. Emi Fukahori won the 2018 World Brewers Cup on a Daterra Laurina lot called “Frevo,” and Perfect Daily Grind has described that lot as anaerobically fermented — but no contemporaneous account corroborates the processing method, and Daterra publishes nothing about it. This is already flagged on Daterra and is repeated here only so the two notes agree: do not cite Frevo as a documented anaerobic competition win.
Why it matters
Anaerobic fermentation is the reason the top of the specialty market looks the way it does now.
- It is built into auction structure. Alo Coffee’s Echoes of the Peak auction in Ethiopia offers its Sidama lots in four processing families — natural, washed, hybrid and anaerobic — with two expressions of each.14 Anaerobic is not the experimental outlier on that sheet; it is one of the four columns.
- It moved the centre of gravity from the field to the wet mill. Jean Paul Langenstein at Carmen Estate in Panama is known for hot-and-cold fermentation regimes on washed Geisha rather than for the land; El Velo’s Esmeralda microlots are sold on “cold fermentation” as the headline attribute. Sealed, controlled fermentation is what makes that shift possible — the producer now has a lever the plant does not control.
- It took the spotlight honey process once held. Honey processing was the experimental method of the 2010s. Perfect Daily Grind argues the newer anaerobic and extended-fermentation lots have inherited that role, and honey has settled into being infrastructure (see Honey process).
- The reproducibility argument is live. Because the flavour comes from a managed fermentation rather than from the farm, critics ask whether process-driven intensity is showcasing terroir or covering it up. That debate is the main reason some competitions and buyers still treat anaerobic lots as a separate class rather than mixing them in.
To verify
The “biggest innovation of the decade” framing, and the missing numbers. Trade write-ups routinely call anaerobic fermentation the most significant processing innovation in specialty coffee of the past decade — an editorial judgement from a single publication, not a measured claim. More importantly, no source consulted supplies named anaerobic lots with verified auction prices, cupping scores or competition placings: no Best of Panama result sheet, Cup of Excellence catalogue or CQI record was matched to a specific anaerobic lot here. The only anaerobic competition figures anywhere in this wiki are the unverified ones on Alo Coffee. Prices and scores for anaerobic coffees should be sourced from primary auction records before being stated.
For a reader, the shortcut: “anaerobic” on a bag is a promise of intensity and wine-like fruit, and a signal that someone spent real attention after the picking — but it tells you nothing on its own about how the coffee was dried, so read the word next to it.
