Peaberry
Split open a normal coffee cherry and you find two seeds, each flat on one side and domed on the other, sitting face to face like a pair of hands pressed together. Occasionally you find one seed instead — round, whole, filling the cavity by itself with nothing to flatten it. That is a peaberry.123
It happens because only one of the two ovules in the coffee flower gets fertilised.123 The surviving seed has no twin to grow against, so it develops as an oval or pea shape rather than a half-cylinder. In Spanish it is caracolillo — little snail — for the same rounded look.1
Not a variety, not a process, not a farm
This is the single most misunderstood thing about the word. “Peaberry” on a bag does not name a plant, a place or a fermentation. It names a shape, and that shape can turn up in any cultivar, any origin, any washed, natural or honey lot. A Tanzanian peaberry and a Kona peaberry have nothing in common except geometry. Compare Geisha (a variety) or Anaerobic fermentation (a process) — peaberry sits in a different category of label entirely.
How common is it, really
The honest answer is that nobody consulted here has measured it properly, and the published figures disagree by a factor of three.

To verify — the frequency figures do not agree
This wiki already flags the same dispute in two other places: Coffee cherry records Perfect Daily Grind’s ~5% against Wikipedia’s 10–15% for coffee beans generally, and Dry milling records Coffeester’s 10–15%. Adding the trade sources read for this note gives a spread of 5% to 15% with no agronomic study behind any of it. Every figure is a reference-site number, not a measured rate. Treat any single percentage you see quoted — including on a roaster’s bag — as unverified.
You cannot see it in the cherry
Nothing on the outside of the fruit gives a peaberry away. Separation therefore happens after pulping and drying, at the sorting stage — which is why peaberry is a dry mill category rather than a harvest one.
Perfect Daily Grind: peaberries are “usually sorted and separated during the post-harvest process. They’ll either be separated by size using a sieve or, alternatively, sophisticated machinery.”2 The size screens and gravity tables described under Dry milling do most of the work, because a round bean of a given diameter behaves differently on a screen from a flat one. Where the volumes are small or the mill is simple, it comes down to people: Nicole Battefeld Montgomery, the 2021 German Brewers Cup champion, told MTPak that “the producer will need a special sorting tray to make it easier… Most of the work is then done by hand and requires a very skilled and focused worker.”3
That labour is the honest half of the price premium. Specialty suppliers “tend to market pure peaberry coffee at a premium,”3 and separating a 5–10% fraction out of a harvest cleanly enough to sell it on its own is genuinely expensive work — the same argument this wiki makes under Green coffee grading about what the word specialty costs at the mill.
Where it became an official grade
In some origins peaberry is not a marketing flourish but a line in the grading schedule.
- Kenya catalogues green coffee by screen size into eight grades, and PB — peaberry — is one of them, sitting alongside E (Elephant), AA, AB, C, TT, T and MH/ML. The Nairobi Coffee Exchange lists it in its own catalogue. See those notes for the caveats on what the other letters mean.
- Hawaii goes further and splits its coffee law in two at the seed. Type I beans are the normal pair; Type II beans are “one round bean per cherry, otherwise known as peaberries,” and they carry their own grade names — Peaberry Number 1 and Peaberry Prime — parallel to the Type I ladder of Kona Extra Fancy, Kona Fancy, Kona Number 1, Kona Select and Kona Prime.4
- Tanzania is the origin most strongly associated with peaberry in the export trade; Wikipedia notes that “peaberry coffees are particularly associated with Tanzanian coffee, although the peaberry variety of Kona coffee has also become quite prominent.”1 MTPak names Tanzania, Kenya and Hawaii as the three origins “particularly associated with it,” and calls Kona peaberry “one of the most expensive and sought-after on the market.”3 Perfect Daily Grind adds Honduras and Kenya.2
To verify — the Hawaii grade names come from one encyclopedia entry
The Type I / Type II split and the Peaberry Number 1 / Peaberry Prime grade names above were confirmed on Wikipedia’s Kona coffee article,4 not read from the Hawaii Department of Agriculture’s published standard. The department’s commodity-standards page could not be retrieved for this note. The structure is consistent with how Kenya treats PB, but treat the exact grade names as a secondary-source reading of the statute rather than the statute itself.
Does it taste better?
This is the claim the whole peaberry market rests on, and the sources that describe the flavour are careful not to credit the shape for it.
The descriptors are consistent. Wikipedia: peaberry coffee is “typically more brightly acidic, more complex in the upper aromatic ranges” but “somewhat lighter in body, than coffee made from normally shaped beans from the same batch.”1 Battefeld Montgomery, from the roasting side: “peaberry coffee has a lighter body and can have a beautiful and very prominent acidity with a light florality.”3 Perfect Daily Grind’s panel of roasters describes “bright acidity, sweetness, and concentrated and complex flavours.”2
The causation is where every source pulls back:
- Battefeld Montgomery immediately qualifies her own tasting note: “variety, growing conditions, and processing techniques have a greater bearing on the cup profile.”3
- Perfect Daily Grind: “with very limited research having been done on peaberries, it’s hard to say if this evidence is the result of the peaberries’ unique growing conditions or simply that the lots in question are high-quality ones.”2
- Wikipedia is blunter still about the roasting version of the claim: peaberries do “roast differently from the corresponding flat berry beans,” which is why high-grade processing separates them — but “the claim that peaberry beans roast better and more evenly than flat beans… has not been substantiated.”1
Put plainly: peaberry lots are often good, and there is no evidence that being a peaberry is why. Farms that bother to separate peaberries tend to be farms that bother about everything else too, and a selection effect is a perfectly sufficient explanation for a reputation. The defensible statement is the narrow one — a round, differently sized bean needs its own roast, so keeping it separate is a roasting decision that happens to create a marketing category.
For what tailoring that roast looks like, Battefeld Montgomery recommends a higher charge temperature, shorter roasting times, and dropping the batch “right at first crack,” warning against “dark roasts or extended roasting times as these beans will taste baked.”3 Perfect Daily Grind notes the round shape makes peaberries “roll better in the roasting machines” with efficient heat transfer, but also reports “a relatively earlier and lower volume… first crack” — the audible cue roasters time by. To verify — the specific density, chemistry and premium numbers in circulation
A widely-syndicated coffee blog supplies most of the precise-sounding peaberry statistics found online: 12–18% higher density than flat beans from the same lot, a ~22% lower surface-area-to-volume ratio, 8.7% peaberry incidence in Ethiopian Yirgacheffe and Tanzanian AA lots, a 22–38% price premium, ~11% more chlorogenic acids retained at a medium roast, and retail prices of USD $150–200 per pound. Fetching the page for this note found no bibliography, no footnotes and no links to any primary lab report; the figures are the author’s own aggregation.5 One number in particular should not be repeated: the density figure is attributed there to an “SCA Green Coffee Protocol v3.1.” The SCA’s green grading standard, SCA-110, is listed on the SCA’s own standards page as in development — a fact this wiki already records under Green coffee grading and Specialty coffee. There is no published SCA green protocol for such a measurement to have come from. None of these figures are stated as fact anywhere on this page.
To verify — caffeine
The research behind this note reports a consensus that peaberries contain no more caffeine than flat beans from the same plant (Arabica peaberry around 1.2–1.3% of dry weight either way). That is very likely correct — nothing about a failed fertilisation would change the seed’s chemistry — but the claim traces back to the same unsourced blog network described above, and none of the three sources actually fetched for this note (Wikipedia, Perfect Daily Grind, MTPak) discusses caffeine at all.123 Recorded as plausible and unconfirmed rather than as fact.
To verify — "genetic mutation" or pollination failure?
Popular coffee writing routinely calls the peaberry a genetic mutation; one outlet builds an entire headline around it. The fetched sources describe something different and much less dramatic: Wikipedia says “only one of the two seeds is fertilized,”1 Perfect Daily Grind calls it “a natural mutation, or defect… where one ovule fails to pollinate,”2 and MTPak names “a combination of insufficient pollination and farming conditions” as the main causes.3 Note that two of those three use the word mutation loosely while describing a pollination event, not a heritable genetic change — a peaberry tree is not a thing, and peaberries do not breed true. No molecular study characterising the mechanism was located.
To verify — there is no peaberry competition record
The research behind this note searched Best of Panama and Cup of Excellence auction records for lots winning or ranking as peaberries and found none. Competition results are published by farm, variety, process and score — never by bean shape. A peaberry may well sit inside a winning lot; nothing in the published record would show it. If you see a cupping score, price or buyer attached to “peaberry” as a category, it did not come from an official auction result. Why it matters
- It is the clearest case in coffee of a physical grade masquerading as a quality grade. Kenya’s AA and Hawaii’s Extra Fancy have the same problem — screen size sold as flavour — but peaberry is the version consumers most readily believe, because the bean looks special in the bag.
- It is a real roasting problem regardless. Whatever the marketing does, a mill that leaves round beans mixed in with flat ones has handed the roaster an unevenly sized batch. Separation is defensible on engineering grounds even if every flavour claim collapses.
- It shows what “no published standard” costs. Because the SCA has not published a green grading standard, there is no authority to check a density or incidence figure against — so invented-sounding numbers with official-sounding citations circulate unchallenged. This note could only knock one down by fetching the page and finding the bibliography missing.
- It is a labour story. The premium buys hand-sorting at origin. That is the part of the claim nobody disputes.
