Quaker

Roast a batch of coffee, tip it into the cooling tray, and among the even brown beans you will sometimes see one or two that look wrong — pale, tan, the colour of a raw peanut. That is a quaker.

A quaker is an underripe bean. It was picked before the fruit around it finished ripening, so the seed never built the sugars and proteins that turn coffee brown under heat. Put it in a roaster and it simply will not darken.1 Everything else on this page follows from that one fact.

Not a farm, a lot, or a brand

“Quaker” in coffee is a defect term and nothing else. The research behind this note looked for a farm, estate, competition lot or roaster trading under the name across Best of Panama, Cup of Excellence and producer catalogues and found none. If you arrived here expecting an auction record, there isn’t one.

What is actually going wrong

Browning in a roaster is a chemical reaction between sugars and amino acids — the same Maillard reaction that browns bread crust and seared meat. An underripe seed has not accumulated enough of either. As one green-coffee retailer puts it: “Underripe beans lack the sugars and amino acids needed for proper browning, so they remain pale during roasting.”1

There is a physical consequence too. Underripe beans are smaller and less dense than mature ones,2 and a lighter bean does not take up heat at the same rate as its neighbours — so even inside a well-run roast it ends up cooked differently from everything around it.3

The colour name is exact enough that people reach for food words: peanut, tan, “several shades lighter than the rest of the coffee.”4 In the cup the descriptors are just as consistent — papery, peanutty, dry, hollow.12 Nothing sweet, nothing aromatic; a quaker contributes the absence of coffee flavour rather than a flavour of its own.

Why it is the one defect a grader cannot catch

This is what makes quakers structurally different from every other fault in Green coffee grading.

A black bean, a sour bean, a stone, an insect-bored bean — all of them can be seen and pulled out of raw green coffee on a lit sorting table. A quaker cannot. “Quakers are invisible in the green.”1 They are hard to spot even right after depulping, when the seed has just come out of the fruit.2 Only heat reveals them.12

So the grading standards had to work around it. Where every other defect is counted on a green sample, quakers are counted on a roasted one — Fine Robusta, the CQI standard this wiki records in detail, sets its quaker ceiling on a 100 g roasted sample rather than the 350 g green sample it uses for everything else. And the specialty full-defect table treats five quakers as equalling one full defect, with the strictest tier quoted as allowing none at all — though this wiki flags those particular ratios as resting on a single trade source, since the SCA’s green grading standard remains unpublished.

The zero-quaker rule does have independent backing. The 2004 SCAA classification recorded under Green coffee grading runs a quaker allowance down its whole ladder: none at all in Grade 1 (Specialty), up to 3 in Grade 2 (Premium), up to 5 in Grade 3 (Exchange).5 Quakers are one of the few criteria that separate the grades on their own.

There is a second consequence that matters to anyone buying coffee: a quaker is a receipt for something that happened at harvest. If pale beans keep turning up in your roasts, “the issue is in the green, not your roasting.”1 No roast profile fixes it, because there is nothing in the bean to develop.

To verify — can UV light reveal quakers before roasting?

Two articles on the same publication disagree. A 2020 piece on sample roasting states that ultraviolet lighting during green inspection “illuminates defects that are otherwise invisible to the naked eye, such as quakers.”6 But the publication’s own dedicated article on UV sorting — written by a roaster using a “$2 black light” — lists the flaws UV picks out as broken beans, undeveloped small beans, beetle damage and machine cuts, and does not include quakers; it mentions quakers only in passing as beans some people argue add nuance.3 Every other source consulted here says quakers cannot be seen in green form at all.12 Treat UV detection of quakers as an unconfirmed claim, not a technique.

Where they come from

Quakers are a harvest problem, and the fix is upstream of every machine in the chain.

The direct cause is unripe fruit reaching the mill. The producer-side guidance is one sentence long: “Be careful to only pick ripe coffee.”2 That is the whole argument for Selective picking — sending pickers back through the same trees over and over to take only red fruit — restated from the roaster’s end of the chain.

Beyond picking, the same producer’s guide names poor tree nutrition and drought as contributors,2 which fits the general pattern: anything that stresses a tree leaves some of its cherries developing unevenly. Strip picking and mechanical harvesting, which take the whole branch at once, load the bag with unripe fruit by design and rely on sorting afterwards to remove it — see Selective picking for what that trade-off costs.

Downstream, the mill’s defences are indirect. Flotation and density sorting at wet mill and dry mill catch underripe seeds because they are light and low-density,2 not because anyone can identify them as quakers. Some get through. Those are the ones you meet in the cooling tray.

What roasters actually do about it

Hand-sort them out, mostly — “as the coffee is cooling you reach down and pull a few light brown beans out of the roasted coffee.”4 It is a small, unglamorous, entirely manual task, and for a specialty roaster running small batches it is normal practice.

It also matters for measurement. Roast colour is read on the Agtron scale by grinding a sample and measuring how much light it reflects, so leaving a varying number of pale beans in the sample moves the reading — quakers have to be sorted out consistently or the number stops meaning anything. To verify — where the name comes from

The usual story is that the term borrows a colour: light brown clothing was worn widely enough among members of the Society of Friends — the Christian movement nicknamed Quakers — that “Quaker Brown” became a name for that shade in the nineteenth century, and an underdeveloped coffee bean happens to land on it.4 The source that tells this story most fully does not claim it as proven. In its own words, the connection is “more than a guess but also wholly circumstantial. There is no smoking gun (yet).”4 No independent lexicon, dye-trade history or coffee-trade document confirming the transfer was found. Record it as the leading explanation, not as etymology. The same source frames quakers as “beans that have not been roasted adequately,”4 which reads as a roasting fault. Every other source consulted places the cause squarely in the green coffee,12 and this note follows them.

Why it matters

  • It is the honest test of a harvest. Cup scores can be flattered by processing and roasting. A count of pale beans in a roasted sample cannot — it reports, fairly directly, how carefully the fruit was picked.
  • It closes the loop between the farm and the roastery. A roaster in another hemisphere, sorting three pale beans out of a cooling tray, is reading the outcome of a decision made by a picker on a hillside months earlier. Very little else in coffee is that legible.
  • It is why “sort it out later” has a limit. Mills can remove almost any physical fault from green coffee. This is the one they can only reduce by proxy, which is why Selective picking cannot be substituted with machinery.
