Coffee cherry

A coffee cherry is the fruit of the coffee plant. It is roughly the size of a grape, it turns from green to red (or yellow, or orange) as it ripens, and inside it are the one or two seeds that the world calls coffee beans.

It is not actually a cherry. The name is a shorthand for its size and colour.

Nearly everything else on this wiki — washed, natural, honey, anaerobic, dry milling — is a decision about which of this fruit’s layers come off the seed, and at what point. So the anatomy is worth knowing first: once you can name the layers, every processing method stops being a list of steps and becomes obvious.

The six layers, outside in

Two independent sources — a trade publication and a coffee reference site — give the same sequence in the same order.12

Skin (exocarp)

The waterproof wrapper. It is green while the fruit is developing and changes colour at maturity — Perfect Daily Grind describes it ripening “to a bright red, yellow, orange, or even pink, depending on variety.”1 Roastopedia agrees on the range and adds that red is the norm, “though a notable number of cultivars—including several Arabica varieties—ripen to yellow.”2 That is why Catuaí and Bourbon both come in red and yellow versions, and why a yellow cherry on a farm is not necessarily an unripe one.

The skin is what a depulper squeezes off in the first minutes of washed and honey processing. In natural processing it is never removed at all — it dries onto the seed and comes off weeks later at the mill as part of one hard husk.

Pulp (mesocarp)

The fruit flesh. It is edible, mildly sweet, and there is far less of it than the word “fruit” suggests — a coffee cherry is mostly seed. Its job on the plant is to feed the developing seed and bribe animals into spreading it.

Mucilage — the layer the whole industry argues about

If you learn one word from this note, learn this one.

Mucilage is the slippery, honey-textured layer of sugar and pectin stuck to the parchment once the skin and pulp are gone. The National Coffee Association’s processing guide describes it plainly as having “a sticky texture similar to honey.”3

It matters because it is food for microbes. Leave it on a drying seed and yeasts and bacteria go to work on those sugars, pushing fruit and ferment character into the bean. Take it off and they cannot. That single choice is the entire three-way split in coffee processing:

Perfect Daily Grind reduces it to seven words: “Leaving the mucilage on results in sweeter coffee with more body.”1 The honey process is named after this layer’s texture, not after any honey in the cup.

Parchment (endocarp)

A stiff, papery shell wrapped directly around the seed. In washed and honey coffees this is what the seed is dried inside, and coffee at that stage has its own trade name: parchment coffee. It is stored, rested and often shipped inland still wearing it, because the shell protects the seed.

Parchment only comes off at the very end, in the dry mill — a step called hulling. See Dry milling for the shed full of machines that does it.

Silverskin

The last and thinnest layer, fused to the bean and tucked into the crease down its middle. Hulling does not fully remove it; an optional polishing step can. Whatever survives to the roaster burns off during roasting as the papery flakes called chaff.12 If you have ever seen a home roaster spraying light brown husks everywhere, that is silverskin.

The seed

Usually two seeds per cherry, each flat on one side and domed on the other, sitting face to face.24 Roastopedia: “Most cherries contain two flat-sided seeds nestled face to face; when only one rounded seed develops in a cherry, it is referred to as a peaberry.”2 See Peaberry.

Dried and hulled, these seeds are green coffee — the thing that is graded, priced, auctioned and shipped. Everything a roaster buys is this layer and nothing else. See Green coffee buying.

To verify

Is a coffee cherry a drupe or a berry? The sources disagree, and it is not a trivial distinction. Roastopedia states the cherry “is classified as a drupe, the same fruit category that includes peaches, plums, and olives.”2 Wikipedia’s coffee bean article says the opposite — that unlike a real cherry with one pit, coffee is “a berry most commonly found having two seeds with their flat sides together.”4 Both framings circulate widely in coffee writing. No botanical taxonomy source was consulted for this note, so this wiki does not pick a side; the layer structure above is agreed by every source regardless of which label is correct.

To verify

How common peaberries are. Perfect Daily Grind puts them at “about 5% of coffee cherries.”1 Wikipedia says peaberries “make up only around 10% to 15% of all coffee beans.”4 This wiki’s Dry milling note already flags the same 10–15% figure from a third source. That is a threefold disagreement between reputable sources, with no agronomic study read on either side. Treat any single peaberry percentage as unverified.

Ripening: when a cherry is ready

Cherries develop over months from a pollinated coffee flower, swelling and then changing colour at maturity. Roastopedia gives the timeline: “Robusta cherries often mature in roughly nine to eleven months from flowering, while Arabica cherries typically take around six to nine months.”2

Ripeness is not a detail — it is the single biggest quality decision made on a farm. Underripe cherry has not built the sugars the seed needs, and picks up sour, thin, undeveloped flavours in the cup.5 This is why specialty farms selectively pick by hand, walking the same tree repeatedly over a season, while commodity farms strip whole branches in one pass. It is also why washed and natural processing both start with the same trick: tip the cherries into water and skim off whatever floats, because underripe, overripe and insect-damaged fruit is less dense than good ripe cherry.

One warning about colour: a green cherry is unripe fruit, while a green bean is a perfectly good dried seed awaiting roasting. The two uses of “green” are unrelated.

To verify

The “3–7 day picking window.” One roasting company’s education blog states that cherries sit at prime ripeness for a window of roughly 3–7 days and must be picked within it.5 No second source consulted gives a number, and the research behind this note flags it as that company’s operational experience rather than a validated agronomic standard. Ripening speed varies with altitude, variety and weather, so a fixed day-count is unlikely to hold everywhere. Treat it as farm-specific advice.

To verify

The flowering-to-harvest timings. The 6–9 month (Arabica) and 9–11 month (Robusta) figures above come from a single coffee reference site.2 No agronomic or institutional source was consulted to corroborate them. The direction — Robusta slower than Arabica — is widely repeated in the trade, but the specific month ranges rest on one source.

Where the water goes

A ripe cherry is mostly water, and the whole of processing is the business of getting rid of it without ruining the seed. The trustworthy fixed points:

ISIC, the coffee industry’s scientific information body, gives the 57% figure for coffee that has just come out of the washing channels and the “desirable maximum of 12.5%” for storage; it applies the same 12.5% ceiling to dried whole cherries in natural processing.6 The National Coffee Association gives approximately 11% as the working target for both methods.3 This wiki’s Dry milling note records the same 10–12.5% spread from the milling side, and Washed process records it from the drying side.

To verify

The “65% moisture in fresh cherry” figure. The research behind this note cites a scanned document giving fresh cherry at about 65% moisture.7 The only source independently fetched here says merely “well over half.”2 ISIC’s 57% is measured at a later point — after pulping and washing — so it neither confirms nor contradicts 65%. The number is plausible and no source disputes it, but it currently rests on one weak citation. Treat “roughly two-thirds water” as an approximation, not a measured constant.

The parts that get thrown away, and no longer are

Strip a cherry down to its seed and the great majority of the fruit by weight is left over. Historically that was waste. Roastopedia lists the routes it now takes instead: cascara (the dried skin and pulp, brewed as a tea-like drink), coffee cherry flour, compost, and animal feed.2 See Cascara.

This is a live commercial story rather than a curiosity — it turns the discard pile at a wet mill into a second product line, and it is one of the few ways a farm can earn twice from the same harvest. It connects directly to the sustainability arguments in Carbon-negative coffee and B Corporation certification.

Why it matters

  • It makes processing legible. “Washed,” “honey” and “natural” are not three unrelated traditions. They are three answers to one question: how much of layers 2 and 3 is still touching the seed while it dries? Once you see that, Pulped natural and the honey colour scale stop being jargon.
  • It explains what a farm actually sells. A producer is paid for layer 6. Layers 1 to 5 are what they have to remove — correctly, at their own cost, without damaging the thing being sold. That asymmetry is most of why processing is where quality is lost.
  • It is where the price records are made. Hacienda La Esmeralda’s record-setting Geisha lots at Best of Panama are the same six layers as any commodity coffee. What separates them is variety, place, and the precision with which those layers were taken off.
  • It sets the vocabulary on the bag. Parchment, mucilage, silverskin, peaberry, green coffee, chaff — every one of these words on a specialty label is the name of a layer of this fruit or the fate of one.
