Pulped natural
Pulped natural is a way of preparing coffee after picking, developed and used mainly in Brazil. The skin of the cherry is stripped off by machine, and the seed — still coated in mucilage, the thin sugary layer glued underneath — goes straight out to dry. There is no fermentation tank and no washing step.1
In Brazil it is called cereja descascada — “peeled cherry” — and cereja despolpada, “de-pulped cherry”. Both terms describe the same single decision: take the skin off, leave the fruit on, start drying.
That puts it deliberately between the two classic methods. Perfect Daily Grind calls it “a middle ground between the dry and wet processing methods,” and Espresso Coffee Guide independently describes it as “half way between dry processing and wet processing”.23
How it actually happens
- Sort by density in water. The cherry is tipped into “a washer with a density sorter that separates the ripe cherry from the under-ripes and dried cherries”.4 The physics is simply that ripe fruit is denser: in a flotation tank the “ripe ones sink, unripe cherries float to the surface”.5 This matters more in Brazil than elsewhere because most Brazilian coffee is strip-picked — the whole branch is stripped at once by machine or hand, ripe and unripe together — so the sorting has to happen after harvest rather than during it.
- Depulp, fast. “The skin of the fruit is typically removed within 24 hours of harvest; mucilage is left intact on the seed”. Royal NY describes the machinery: “Drum and disc pulpers operate based on abrasion while more advanced pulpers will use pressure to force the seeds through screens and out of the cherry”. Crucially, the machine is not a fixed setting — “the pulper can be adjusted to remove almost all or only part of the mucilage”.5 That one dial is where most of the confusion about this method comes from, and it is the mill’s choice, not the method’s.
- Dry it, sticky. The mucilage-covered parchment goes onto patios or raised beds in the sun. Cafe Imports gives 10–15 days on average, typically on patios. The trader Sucafina describes standard Brazilian practice as laying “parchment and remaining mucilage… to dry in thin layers on patios,” with the parchment “carefully monitored and turned frequently to ensure even drying”.6 Thin layers are the point: a deep bed of sticky parchment holds heat and moisture in the middle and ferments unevenly.
- Turn it, constantly. Coffees “must be turned regularly to avoid mildew, which can lead to mold and fungus”.
- Finish in a machine. Brazilian mills commonly move pulped-natural lots into mechanical dryers to complete drying.
- Hull and grade. The dried parchment — plus the hardened mucilage stuck to it — is milled off and the green coffee is sorted and bagged: the same finish every method ends with. See Dry milling.
Steps 2 and 3 are the whole method. What is missing is the point: no tank, no channel wash, no rinse.
All of it happens on the growing side of the trade, not at the port. The French roaster Brûlerie du Quai describes the method as “applied to coffee beans just after picking: it is therefore done in Brazil, by the planters/exporters”5 — meaning the farm or its mill owns the decision, and by the time a green buyer sees the lot the processing is already locked in. It is not a cheap decision either: the same source calls the preparation “quite complex,” needing “more hi-tech equipment, more labor, and time” than drying whole cherries in the sun.

For comparison, natural coffee takes roughly two to six weeks and washed parchment dries in eight to ten days — pulped natural sits between them there too, which is exactly what it was built to do.
To verify
The drying window is a range, not a number. Cafe Imports gives 10–15 days on patios; the Japanese trade site Coffee Fanatics gives about 20 days, and puts honey lots at 22–30+ days depending on how much mucilage is left on. Nobody consulted here measured anything — these are practitioners’ rules of thumb, and the real figure moves with altitude, humidity, how thickly the coffee is spread and whether a mechanical dryer finishes the job. A figure of “up to four weeks” circulates alongside pulped natural, but the source it traces to (Dr Wakefield) applies it to natural coffee, not pulped natural — do not carry it over.
What a commercial pulped-natural offering actually looks like
Because the method exists to move volume, the clearest picture of it is a trader’s standing offer sheet rather than a single celebrated lot. Sucafina’s “Brazil Pulped Natural” listing describes the everyday shape of the category:6

Two things stand out. The altitude band starts at 500 m — far below the 1,500 m-plus that competition coffees advertise — which is a reminder that this method was designed for the parts of Brazil where the land is lower, flatter and machine-harvested. And the offer is quoted as a grade, not a farm: NY2 16/18 SSFC is a commodity-and-a-bit specification that a buyer can order by the container and expect to taste roughly the same next year. That is the opposite of how a Best of Panama lot is sold, and it is the whole commercial logic of pulped natural.
Why Brazil invented it
Three independent trade sources agree on the motive, and none of them says “flavour.”
Cafe Imports: the technique “was developed in Brazil in order to speed the drying process, as the more traditional Natural process can take quite a bit longer to complete, which puts the coffee’s quality at greater risk”. Royal NY gives the same reasoning in commercial terms — the goal was “increasing production by decreasing the time it took to dry the coffee”.
The logic is physical. A whole cherry is a lump of wet fruit that has to lose all its water through an intact skin, and it lies in the open for weeks while it does. Take the skin off and the same seed dries in half the time, with far less opportunity to mould, over-ferment or pick up the defects that long drying invites. In a country producing millions of bags a year, cutting drying time is not a refinement — it is inventory, patio space and risk.
There is a climate condition attached. Espresso Coffee Guide: the method “works best in regions where the humidity is low so the coffee’s mucilage can be dried quickly without fermentation occurring”. Trabocca describes exactly that weather in Brazil’s growing regions — “scarce rainfall, consistent long dry periods and large amounts of sunshine” — as the reason natural and pulped natural dominate there. Brazil’s harvest lands in its dry season, which is why the method works there and is a gamble almost everywhere else. This wiki’s Cerrado Mineiro note reaches the same conclusion from the regional side: a hard dry season at harvest makes natural the default and pulped natural the main alternative.
To verify
Nobody agrees when it started. Royal NY says the process “was started and named pulped-natural in Brazil around the 1950s”.7 Perfect Daily Grind, writing in 2016, says it “was pioneered in Brazil around twenty years ago” — i.e. the mid-1990s. A third write-up places the invention specifically in the Cerrado of Minas Gerais in the 1990s and calls it “Brazil’s signature contribution to coffee processing”.8 Forty years apart is not a rounding error; the likeliest explanation is that these date different things — early industrial use versus adoption by the specialty trade — but no source consulted distinguishes them, and no Brazilian institutional document (Embrapa, BSCA, a research-station report) was read. A third date has since turned up while researching IAC: Consórcio Pesquisa Café is reported to say the São Paulo state agronomy institute established the basis for cereja descascado in the 1960s, to improve quality in more humid regions. It is the only version that names an institution, and it sits between the other two rather than resolving them. Do not quote a date for the invention of pulped natural.
Is it the same thing as honey process?
This is the most common confusion about the method, and the sources genuinely split on it.
Royal NY takes the strong position: “Pulped-natural and honey processing are different names for the same production style,” with Brazil using one word and Costa Rica the other. On the mechanics, that is fair — both peel the cherry and dry the seed with mucilage on.
The order of events is worth getting straight, because the popular word arrived second. The Brazilian term “predates the widespread use of the term ‘honey’ in specialty coffee discourse,” and the underlying technique — “pulping the cherry but skipping full mucilage removal before drying” — has “older, more industrial roots in Brazil” than the Costa Rican micromill movement that renamed and refined it.9 So a reader meeting “honey” first and “pulped natural” second is meeting them backwards: the industrial method came first, and the artisanal vocabulary was built on top of it.
Cafe Imports draws the line at intent instead: “Honey processing is primarily used to affect the flavor characteristics of a lot,” where pulped natural is about efficiency. The consequence shows up in the cup. Brazilian pulped naturals, per the same source, show “less of an intense fruity flavor” than honey lots — “a toasted-nut or a chocolate characteristic with some pulpy or boozy notes underneath.”
The useful way to hold both: pulped natural is the method; honey is what happens when you start steering it. A honey producer decides batch by batch how much mucilage to leave on and how fast to dry it, and labels the result white, yellow, red or black. A Brazilian pulped-natural mill takes the skin off and gets the coffee dry. Royal NY records the handover directly: Costa Rica “has pioneered the use of this method for specialty coffee and producers have experimented greatly with different techniques for increased quality” — a reading the existing Honey process note already reflects from the Central American side.
To verify
“Semi-washed” as a synonym. Two trade sources equate the terms: a glossary10 and the UK green importer Dr Wakefield, which writes “the semi-washed or ‘pulped natural’ process involves mechanical removal of the outer skin”.11 That is real usage, but “semi-washed” is applied loosely across the trade to more than one method — including Indonesian wet hulling, which is a different thing entirely — and no standards body consulted defines it.12 Treat it as a rough shorthand a seller might use, not a definition. It is listed as an alias here so readers searching that word land somewhere honest.
To verify
One source describes the mucilage coming off, which would contradict the definition. Genuine Origin’s account of Brazilian practice says the ripe cherry goes to the de-pulper where the seeds are “de-pulped, de-mucilated and then the parchment leaves the machine and goes straight to the patio” — while the same page also frames pulped natural as coffee “washed but hasn’t spent time in a fermentation tank.” Most other sources consulted say the defining feature is that mucilage stays on through drying — but a second source now cuts the same way from a different direction: Coffee Fanatics (Japan) draws the line between pulped natural and honey by how much mucilage survives, saying standard pulped natural removes most but not all of it while honey grades deliberately retain roughly 0%, 30–50% or 100%.13 Two sources on two continents therefore treat “pulped natural” as partial mucilage removal rather than none. There is now a mechanical explanation for the disagreement: the pulper itself “can be adjusted to remove almost all or only part of the mucilage,” so two mills running the same nominal process can send meaningfully different coffee to the patio.5 Sucafina’s own offer sheet splits the difference in wording, describing the drying of “parchment and remaining mucilage” — some retained, quantity unstated.6 That explains how the range exists without settling what the label guarantees, and it may also be why the moisture targets disagree (11% vs 11.5–12%). No Brazilian mill’s own technical description was read to settle it. Where a bag says “pulped natural,” assume mucilage was largely retained, but be aware the label covers a range of real practice.
What it tastes like
The descriptors are consistent, and consistently mid-range:
- Cafe Imports: “Pulpy fruit, nutty characteristics, citric acid, chocolate, syrupy or creamy body, medium-low acidity but often noticeably fruity flavor”.
- Perfect Daily Grind: these coffees “normally have the body of a natural coffee and the sweetness and acidity of washed coffees,” giving “a consistent aromatic beverage”.
- Trabocca, a Dutch green importer, describes the Brazilian pulped natural result as a “rich flavoured, homogenous and clean profile,” and the country’s coffee generally as a “sweet big bodied flavor profile, that usually reveals notes of chocolate, caramel and nuts”.14
Notice the word Perfect Daily Grind reaches for: consistent. That is the actual selling point. Where a natural can be spectacular or ruined and a washed coffee promises clarity, pulped natural promises a sweet, chocolatey, medium-bodied cup that arrives more or less the same every year — which is precisely what a blender or an espresso roaster buying by the container wants.
Where it sits between the other methods

Read it as a dial rather than four boxes: the more fruit touching the seed while it dries, the more fruit and body in the cup and the less clarity. Pulped natural and honey occupy the same notch on that dial and differ by intent, not by position.
The water bill sits on the same dial. Pulped natural uses less water than washed — there is no fermentation tank to fill or channel to rinse — but more than a straight natural, which needs none at all; Espresso Coffee Guide notes it “requires more processing time and consumes more water than straight natural processing, but also offers a better quality cup”. It also needs equipment a natural does not: a washer, a density sorter, a pulper and often a mechanical dryer.
To verify
The “80–90% less water” figure. One glossary states that pulped natural uses “80–90% less water than washed processing” and gives producers “the ability to process larger volumes with less labor than high-quality naturals”.10 Both claims are plausible in direction and both are single-sourced from a secondary glossary — no mill water audit, no Embrapa or BSCA measurement, and no second independent source consulted repeats the percentages. The labour claim also cuts against Brûlerie du Quai, which says the preparation needs “more hi-tech equipment, more labor, and time” than drying whole cherries.5 The two can be reconciled — a high-quality selectively-picked natural is labour-intensive in a way a bulk natural is not — but no source consulted makes that distinction explicitly. Do not quote the percentage as a measured figure.
Why it matters
Pulped natural is the quiet answer to a question the auction market never asks: how do you make several million bags of coffee decent, every year, on purpose?
- It is a Brazilian default, not a specialty flourish. “The vast majority of Arabica coffees produced in Brazil are natural process, where the weather permits,” with pulped natural the main alternative. Brazil is the largest coffee producer on earth, so “the main alternative in Brazil” is a very large amount of coffee — and much of it ends up in espresso blends rather than on a single-origin menu.
To verify
Common or rare? The two claims sit badly together. Genuine Origin frames pulped natural as Brazil’s main alternative to natural — i.e. an everyday industrial method — while Brûlerie du Quai calls pulped-natural coffees “very rare on the market” and the preparation “quite complex”. Both can be true at once if they are counting different things: a large share of Brazil’s crop, but a small share of the named single-origin bags a European specialty roaster puts on a shelf. Neither source gives a volume figure, and no production statistics from a body that would actually know — Conab, the BSCA or the ICO — were consulted.15 Treat any “X% of Brazilian coffee is pulped natural” claim as unsourced.
- It is the parent of honey processing. Everything the specialty world now does with mucilage — the colour grades, the sealed-tank experiments, the batch-by-batch decisions about how much fruit to leave on — starts from the observation that a peeled, sticky seed dries into something sweeter than a washed one. Brazil found that out while trying to save time.
- It shows what a processing method is actually for. Most of this wiki’s processing stories are about flavour. This one is about risk: shorter drying, fewer defects, less coffee lost. The cup profile was a by-product that turned out to be worth selling.
- It is a premiumisation story in reverse. Best of Panama and Cup of Excellence create value by isolating one extraordinary lot. Pulped natural creates value by lifting the floor under an entire national crop — the same logic as Cerrado Mineiro’s 80-point certification threshold, applied at the mill instead of the boundary.
To verify
No competition result, auction price or cupping score for a named pulped-natural lot could be established. The research behind this note turned up no Cup of Excellence Brazil, ACE or BSCA auction record identifying a specific Brazilian pulped-natural lot with its producer, score, hammer price and buyer, and no formal SCA-scored sensory study of the method. The flavour descriptions above come from green-coffee importers and trade publications — accurate as descriptions, but not measurements. Anyone quoting a score or price for a pulped natural is going beyond what is documented here.
For a reader, the practical shortcut: “pulped natural” on a bag is a Brazilian promise of sweetness, body and chocolate without much fruit-bomb intensity — and it tells you the mill chose speed and reliability over both the risk of a natural and the water bill of a washed.
