Cenicafé

Cenicafé is the research centre of Colombia’s national coffee growers’ federation. Its full name is the Centro Nacional de Investigaciones de Café “Pedro Uribe Mejía” — the Pedro Uribe Mejía National Coffee Research Centre — and it sits on a campus outside Chinchiná, in the department of Caldas, in the middle of Colombia’s coffee belt.1

It is a laboratory, not a farm and not a brand. You will never buy a bag of Cenicafé coffee. What you will very likely drink is a Cenicafé plant: Castillo, the variety that covers something like 40–45% of Colombia, came out of this institute, and so did the three other rust-resistant Colombian varieties in general circulation.234

Two other things on this wiki trace back here, and neither is a plant. The working definition of what a washed coffee actually is — fruit removed before drying begins — is quoted from a Cenicafé investigator.5 And the Becolsub and Ecomill machines, also Cenicafé’s, cut the water needed to wash a kilo of coffee from about 40 litres to 0.3–0.5 litres.5 For an institute nobody outside Colombia can name, that is a lot of the furniture.

What it is, plainly

Cenicafé is the scientific research division of the Federación Nacional de Cafeteros de Colombia (FNC) — confirmed on the institute’s own publications repository, which describes itself as belonging to “the research division of the National Federation of Coffee Growers of Colombia.”1 It is not a government agency and not a university. The FNC is a producers’ federation founded in 1927, representing over half a million Colombian growers,6 and Cenicafé is the part of it that does science.

That ownership explains almost everything about how the institute behaves. Its customer is the Colombian smallholder, not a seed company or a specialty buyer. Varieties it develops are handed to federation members rather than licensed out — the opposite of a proprietary cultivar. And the questions it works on are the ones a grower on a steep hillside actually has: will this tree survive the disease, how much will it yield, and how do I process it without a river.

Cenicafé was created in 1938 by the FNC, eleven years after the federation itself.74 This wiki’s Colombia note records the same date from an independent encyclopedia record.

Its stated research remit covers on-farm production, harvest and post-harvest (beneficio), the quality of the bean, the use of coffee by-products, and conservation of natural resources across the Colombian coffee zone — the whole chain from planting hole to dried parchment, plus the environmental cost of all of it.748

To verify — how it is funded and governed

This is now partly resolved, and the resolution came from the parent’s paperwork rather than the institute’s. The FNC note establishes that the federation administers the Fondo Nacional del Café, a parafiscal account — a compulsory levy ring-fenced for the sector that pays it — contributed to exclusively by Colombian coffee growers, and that the federation’s own Antioquia committee lists scientific research as one of the five Bienes Públicos Cafeteros, the “coffee public goods” the levy buys.9 So the broad shape holds: Cenicafé is paid for by Colombian growers, out of a levy on themselves.

What is still missing is every number. No budget figure, no funding split, no levy rate, and no governing-board or legal-form document for Cenicafé specifically was located or read — and as the FNC note records, the federation publishes no rate or founding instrument for the fund either. The commonly repeated description of the levy as an export tax per bag remains unconfirmed at source. State that growers fund it through the FoNC; do not state how much, at what rate, or who signs off on the research programme.

How it began: 1927, 1934, 1938

The institute did not appear from nothing in 1938. The research behind this note traces a three-step sequence, and it is a useful corrective to the idea that a research centre is founded by decree.

1927 — a budget line. Almost as soon as the FNC was founded, it set aside money for a sección científica — a scientific section — and for experimental coffee farms. The federation describes this allocation as the “first seed” of what became Cenicafé.10 Nothing was built yet; the federation had simply decided that science was something growers’ money should pay for.

1934 — a station and a champion. The FNC’s general manager Mariano Ospina Pérez pushed for a proper scientific body for coffee. That year the granja Enrique Soto, a farm in Cundinamarca, was designated the Estación Central de Investigación — the central research station — with four departments: agronomy, agricultural chemistry, entomology and plant pathology.10 Those four are recognisably the institute’s shape today: how to grow it, what is in it, what eats it, what infects it. Ospina Pérez later became President of Colombia, which is some measure of how central coffee was to Colombian public life.

1938 — the name. The experimental farm at Chinchiná, Caldas took over as the Estación Central de Investigación and formally became Cenicafé.10 The centre of gravity moved from Cundinamarca to Caldas, where it has stayed for nearly ninety years.

So the founding is better read as a relocation and a renaming than a creation. The FNC had been doing coffee science for four years before the word “Cenicafé” existed, and had been paying for the idea of it for eleven.

To verify — the exact founding date, and this whole sequence

  • The research behind this note gives the founding date as 9 November 1938, citing Cenicafé’s own two anniversary news pages and the FNC’s glossary entry.10118 None of those three could be read here. www.cenicafe.org refused the connection, and the FNC glossary URL returned HTTP 404.8 The independent encyclopedia record that was read gives only the year, 1938, with no day or month.7 A precise date reported consistently by an institute about its own anniversary is likely right — but it rests entirely on sources this wiki has never successfully opened. Quote “1938” unless you can open a Cenicafé page.
  • Everything in the three paragraphs above — 1927’s budget line, Ospina Pérez, the 1934 granja Enrique Soto, the four founding departments, the move to Chinchiná — comes from that same unreadable set,10 and none of it is corroborated anywhere else consulted. The encyclopedia record mentions neither Ospina Pérez, nor 1934, nor the granja Enrique Soto.7 Treat the sequence as the institute’s own account of itself, not as independently established history.

Chinchiná or Manizales? — resolved

This note previously flagged a conflict over where Cenicafé actually is, because its own pages say Manizales and its repository says Chinchiná. The repository’s address block, read again here, resolves it: the physical campus is “Sede Planalto, km. 4 vía Chinchiná-Manizales, Chinchiná (Caldas)” and the mailing address is “A.A. 2427 Manizales”.1 A.A. is apartado aéreo, a post-office box — so the laboratory is in Chinchiná and the post box is in Manizales, which is why both towns appear on official Cenicafé material. The research behind this note independently reports the same box number, plus postal code 170009, from Cenicafé’s own news pages.1011 It also explains the two sources that pointed at Manizales: the institute’s own history page12 and its LinkedIn profile,13 both of which give the town a correspondent would write on an envelope.

The kilometre-4 marker sits on the road running between the two towns, roughly 20 km apart in Caldas. Anything addressed to Manizales still reaches the institute; the science happens in Chinchiná, alongside the Naranjal central station.

To verify — which name the campus goes by

Two names are in circulation for the same site. The repository calls it “Sede Planalto”,1 while the research behind this note reports Cenicafé’s news pages calling it “Sede principal Pedro Uribe Mejía”.1011 Pedro Uribe Mejía is the honorific in the institute’s full official name,1 so these are most likely the site name and the institution’s dedication rather than two places — but no Cenicafé page naming the campus could be read here: www.cenicafe.org refused the connection outright (ECONNREFUSED), as it did on the previous pass. Only biblioteca.cenicafe.org answers.

The eight experimental stations

Cenicafé does not test in one place, and that is the whole point. Colombia’s coffee grows on three parallel mountain ranges with wildly different altitudes, rainfall and day length, so a variety that thrives in Caldas may not in Cauca. The institute runs eight experimental stations spread across the country, with Naranjal, in Chinchiná, as the central one.74

This register comes from a single encyclopedia source, read directly.7 It matters more than a list of addresses usually would, because Cenicafé’s varieties are named after these stations — the seven regional versions of Castillo each carry the name of the station where the line was selected and evaluated.

The eight count is now the firmest number on this page: the encyclopedia record, re-read here, gives eight stations distributed across Colombia’s three mountain ranges with Naranjal as the central one,7 and the research behind this note reports the same eight from a 2025 feature written nearly a decade later.14 Two sources of different provenance, a decade apart, agreeing on a count is about as good as this note’s sourcing gets.

To verify — how many people work there

The research behind this note reports Cenicafé staffed by 52 researchers drawn from 12 disciplines, about half of them holding PhDs, and describes the institute as having started with “un pequeño grupo de investigadores” on a farm in Chinchiná before expanding to the present network.14 Two problems. First, it is a single source: the encyclopedia record confirms only that the centre employs “investigadores capacitados” in the relevant disciplines and gives no number at all.7 Second, and more seriously, that source is sponsored content — the article sits under El País’s branded / Los líderes de Colombia path, meaning it is commercial material published on a newspaper’s domain, not its journalism, and the subject of such a piece is typically the party paying for it. It could not be read here either (elpais.com is not fetchable by this wiki’s tools), so even the branding label is carried second-hand from the research report. Do not quote a headcount for Cenicafé.

To verify — the station list and the Castillo line names do not fully match

Five of the seven regional Castillo lines recorded on the Castillo note — Naranjal, El Rosario, Pueblo Bello, El Tambo and Paraguaicito — line up exactly with stations in the table above, which is a useful independent cross-check on both lists. But two do not: “Castillo La Trinidad” and “Castillo Santa Bárbara” name no station in this eight-station register, and two stations here (La Catalina, Líbano) name no Castillo line. Possible readings: the station network changed over time, La Trinidad and Santa Bárbara are sub-stations or trial sites rather than full stations, or one of the two lists is incomplete. No Cenicafé station register was read — the institute’s own site was unreachable — so treat both lists as good but unconfirmed at source. The departments in the right-hand column above rest on one encyclopedia entry.

What it has bred

Cenicafé’s genetic-improvement programme began in 1968, and its through-line for nearly sixty years has been a single problem: Coffee leaf rust, the fungus that strips a coffee tree’s leaves and takes the crop with them.3 Every variety below is built on the Timor Hybrid — a natural Arabica–Robusta cross found in Timor that carries rust resistance — bred back onto a Colombian frame.

Before you can breed, you need something to breed from. The research behind this note dates the institute’s germplasm collection — its living library of coffee genetics, assembled from varieties gathered across the world’s coffee regions — to the 1950s — a decade or more before the breeding programme proper started.14 That ordering is the professional version of the work: years of collecting and cataloguing plants nobody had an immediate use for, so that when rust did arrive there was material on hand to cross. The 1950s date is single-sourced to the sponsored feature discussed above and should not be quoted as a year.

Cenicafé had a resistant variety in growers’ hands before the disease arrived. Coffee leaf rust was first identified in Colombia on 27 September 1983, in Caldas — a date this wiki’s Variedad Colombia note carries from a Colombian roaster’s account,15 and which the research behind this note reports independently.14 That report places the release of Variedad Colombia one year earlier — pointing at 1982 — and describes it as the culmination of nearly two decades of work, which squares with a programme that started in 1968.14 Colombia is the rare coffee country that built the extinguisher before the fire, and that is what years of pointless-looking plant collection buy you.

The sequence is solid and stated as fact on the Variedad Colombia note from three separate sources; the release year itself is not. That note records 1982, 1984 and 1977 all in circulation and instructs readers to quote only “the early 1980s” — so read the claim above as “before the outbreak,” not as a date.

Note what is not in that column: no flavour target, in the early releases at least. The brief was survival and yield. The specialty market’s long-running complaint about the Catimor family — that resistance borrowed from Robusta costs you the cup — is argued out in full on the Castillo note, where a controlled same-farm trial found the variety was not what was capping the score.

Cenicafé 1, the variety named after the institute

Cenicafé 1 is the only variety on this wiki named after the laboratory that made it, and it is the clearest single illustration of what the institute does. Perfect Daily Grind’s account, read directly for this note, gives the specification:2

  • Parentage: Caturra × Timor Hybrid 1343 — the same recipe as Castillo, with a named, specific Timor line.
  • Twenty years of research, narrowed from 116 advanced progenies.
  • Resistant to both Coffee leaf rust and coffee berry disease — the second being a fungus that attacks the cherry itself rather than the leaf. Castillo’s brief covered rust; this widens it.
  • 17.6 kg of cherries per tree over a cycle of four harvests, comparable to Castillo.
  • 84% of beans at screen size 18 — Colombia’s Supremo grade, its largest-bean classification. Against 79% for Castillo and 54% for Caturra, that is the real headline: same yield, bigger beans.
  • Initial cup scores of 84 points, with a Caldas panel reporting cocoa, honey and hazelnut.
  • Plantable at 10,000 trees per hectare without shade, or 5,000–7,000 with.
  • Four tonnes of seed were distributed across the country in 2017.

To verify — 2016 or 2017 for Cenicafé 1?

This note’s variety table says 2017, from a trade publication dated November 2017 that was read directly and that records four tonnes of seed distributed that year.2 The research behind this note gives the release as 2016.14 The likeliest reading is that both are right about different events — a variety announced or registered in 2016 and distributed to growers in 2017 — which is the normal gap between a release and seed actually reaching farms. But no registration document was read, the 2016 claim rests on the unreadable sponsored feature discussed above, and this note keeps 2017 only because that is the source it could open. Say “released in 2016–2017.”

Bean size sounds like a technicality and is not. Colombian growers are paid against a grading scale in which screen size is a large term, so moving Supremo yield from 54% to 84% is a price increase on the same harvest — which is a more direct route to a smallholder’s income than a cupping score they have no way of capturing.

To verify — the 84 points, and everything a buyer would want to know

  • The cupping figure is an institutional claim, not a graded result. “Initial cup scores of 84 points” is reported by a trade publication citing the FNC.2 No panel size, no protocol, no calibration and no score sheet is public, and 84 on an unnamed scale is not the same thing as an 84 from a Q Grader.   • No processing method is specified for any of the lots described. Washed is overwhelmingly the Colombian norm, but that is inference about a country, not a documented fact about these lots.216
  • The UK roaster Pact Coffee claims a “world exclusive” on a Cenicafé 1 lot, describing orange blossom, honeycomb and dark chocolate.16 No price, volume or farm-level terms are disclosed, the page was not read at source here, and a roaster describing its own coffee is marketing, not evidence.

The variety catalogue has no record of any of it

The World Coffee Research variety catalogue is the reference this wiki leans on for independent ratings of yield, stature, altitude band and quality potential. It has no retrievable entry for Cenicafé 1: a request for /varieties/cenicafe-1 returns HTTP 404, confirmed here.17 As the Castillo note records, /varieties/castillo and /varieties/colombia return 404 as well.17

So the world’s most-planted rust-resistant Arabica family — the trees under a large share of the third-biggest coffee origin on earth — has no independent technical record in the catalogue of coffee varieties. Every agronomic number on this page comes from Cenicafé, the FNC, or a journalist quoting them.

That is not a small caveat and it is worth naming honestly: it makes Cenicafé simultaneously the most productive coffee breeding programme on this wiki and the least externally audited. Compare IAC in Brazil, whose releases we can state with confidence precisely because an institute in another country wrote them down.

The half that isn’t breeding

Plant breeding is the visible output. Two others reach further than the wiki’s other research institutes manage.

Processing definitions. When this wiki needed a defensible answer to “what actually makes a coffee washed,” the sentence that settled it came from Carlos Oliveros, Principal Investigator at Cenicafé: a washed coffee is one that has had its fruit layers removed before drying begins.5 Gloria Inés Puerta, Cenicafé’s quality investigator, supplies the Colombian fermentation window — 18 to 24 hours, depending on temperature.5 Those are on the Washed process note, and they are the reason it has a definition rather than a description.

Water. Washing coffee the traditional way is enormously wet, and Colombia washes nearly all of its coffee. Cenicafé built two machines against that: the Becolsub, which strips mucilage in under 40 seconds, and the Ecomill, which takes water use from about 40 litres per kilo down to 0.3–0.5 litres per kilo.5 That is roughly a 99% reduction, and it is arguably a bigger environmental result than anything in the institute’s seed catalogue.

It has no competition record, and that is the right answer

No competition placement, auction price, buyer or cupping certificate is attached to Cenicafé anywhere. The research behind this note looked for Cup of Excellence and ACE records, auction results, and SCA or CQI documentation naming Cenicafé or Cenicafé 1, and found none. No altitude is published for its stations or trial plots either.

That absence is structural. A breeding institute is not a producer; its output is seed, and the seed reaches a score sheet years later under a farmer’s name, in a region the institute never visits. The same thing is true of IAC, whose Catuaí won Brazil’s Cup of Excellence without IAC appearing anywhere on the result.

Why it matters

Most coffee-producing countries have a research institute — ICAFE in Costa Rica, ANACAFÉ in Guatemala, IHCAFE in Honduras, CATIE regionally. Cenicafé is the one whose work you can see from orbit. A single institute’s decision, executed through a federation that could actually reach every grower, changed what an entire country plants. From 2008 Colombia swapped billions of Caturra trees for Castillo; the national average coffee tree is now a Cenicafé hybrid.

The uncomfortable half of that story is concentration. When one body breeds the varieties, defines the processing, runs the extension service and owns the origin brand, a mistake propagates as efficiently as a success — and the resistance those varieties carry is borrowed from a single source, the Timor Hybrid, under constant selection pressure from a living fungus. Cenicafé’s answer so far has been to keep moving: Variedad Colombia, then seven Castillos, now Cenicafé 1 with a second disease covered. That is a treadmill, not a victory, and it is the same treadmill climate change is about to speed up.
