Villa Sarchi

Villa Sarchi is a naturally short version of Bourbon. One gene changed in a Bourbon field in Costa Rica, the tree stopped growing tall, and Costa Rican farmers kept it — for the same reason farmers everywhere keep a short coffee tree. You can plant it closer together and pick it without a ladder.

It is the third of three. Bourbon threw this same dwarfing mutation independently in three countries, and each time the local industry seized on it within a generation: Caturra in Brazil, Pacas in El Salvador, Villa Sarchi in Costa Rica. World Coffee Research describes all three the same way — a natural mutation of Bourbon producing a compact plant.

What makes Villa Sarchi worth its own note is what happened next. Breeders crossed it with the Timor Hybrid and got the entire Sarchimor family — the rust-resistance lineage that includes Parainema, Marsellesa and IAPAR 59. Villa Sarchi is the reason a Honduran farm can plant a rust-resistant tree that still cups well.

The variety also goes by two other names in the trade: La Luisa and Villalobos Bourbon.1

Where it came from

World Coffee Research places the discovery in the northwestern part of Alajuela province, Costa Rica, during the 1950s or 1960s — no exact year is recorded. The catalogue names ICAFE, the Instituto del Café de Costa Rica, as the breeder, and the plant subsequently went through pedigree selection.

That vagueness is the honest state of the record, and the trade fills it in inconsistently — “late 1950s”, “during the 1950s”, “probably in the 1950s or early 1960s”, all and cited via the research report only.234 None of them cites a primary record, and the catalogue’s own answer is a decade-wide window. Compare Pacas, where a single year (1949) is documented, and Caturra, where the window is 1915–1918.

The name points at the place. Sarchí is a town in Alajuela’s West Valley (Valle Occidental), and that valley is still where the variety concentrates.

Pedigree selection is worth unpacking, because it is the step that turns a lucky tree into a plantable variety: take the mutant’s seed, grow it out, keep only the offspring that stayed short and cupped well, repeat for generations until the population breeds true. Every one of the three dwarf Bourbons went through this, run by a different national institute — IAC for Caturra, ISIC for Pacas, ICAFE for Villa Sarchi.

From Costa Rica it went to Honduras. The catalogue records that Villa Sarchi was introduced to Honduras in 1974 — the same year, by the same national institute (IHCAFE), that Pacas made the same journey. Honduras imported both Central American dwarf Bourbons in one go.

To verify

One source calls Villa Sarchi a Bourbon × Typica cross. It is not, as far as the catalogue is concerned. German Wikipedia describes it as a natural cross between Bourbon and Typica.5 World Coffee Research states plainly that it is “a natural mutation of Bourbon” and files it in the Bourbon-Typica group (Bourbon related) — and “Bourbon-Typica group” is the name of a broad genetic cluster containing nearly all cultivated Latin American Arabica, not a statement that a particular variety is a cross of the two. A trade source independently describes Villa Sarchi as “genomically pure Bourbon” with no crossing. Treat the cross claim as a misreading of the group name.

Set that table beside Caturra’s and Pacas’s and the three are nearly interchangeable: same dwarf stature, same 5,000–6,000 plants per hectare, same year-three first crop, same susceptibility to all three major diseases, same “Good” cup rating. The mutation did the same thing three times.

Two rows do separate Villa Sarchi from its two cousins.

Bean size is below average. Caturra and Pacas both rate “average”; Villa Sarchi is the small-beaned one. That matters commercially, because green coffee is graded and priced partly on screen size, and a below-average bean loses points before anyone tastes it.

It handles wind and altitude. The catalogue’s note — “well-adapted to highest altitude conditions and tolerant of strong winds” — is the only genuine agronomic advantage the record gives it over the other two. A compact tree at 1,700 m on an exposed Costa Rican ridge is a real proposition, and it is why Villa Sarchi survives in the specialty blocks of West Valley farms rather than being replaced outright by Caturra.

The high nutrition requirement is the catch, and it is Caturra’s catch too. Six thousand hungry trees per hectare rewards a farm that can afford fertiliser and punishes one that can’t. Note that Pacas rates only medium here — of the three dwarf Bourbons, the Salvadoran one is the cheapest to feed.

Then the row that shaped the variety’s whole legacy: low resistance to Coffee leaf rust. Villa Sarchi inherited Bourbon’s sweetness and Bourbon’s fragility together. Everything in the Sarchimor family exists to patch exactly that line.

To verify

A widely quoted planting density contradicts the catalogue by a factor of nearly two. One roaster guide gives Villa Sarchi a density of 3,585 plants per hectare at 1.67 m × 1.67 m spacing.6 World Coffee Research publishes 5,000–6,000 plants/ha under single-stem pruning. The numbers are not reconcilable as stated, and the likeliest explanation is that they describe different pruning systems — but no source says so. Quote the catalogue figure, and treat 3,585 as one farm’s or one guide’s scheme rather than a standard.

To verify

The “40% higher yield than Bourbon” figure has no source behind it. One roaster page asserts Villa Sarchi yields “nearly 40% higher” than standard Bourbon,7 with no trial, institution or dataset attached. World Coffee Research rates Villa Sarchi’s yield potential as plain “Medium.” As on the Caturra note, both can be loosely true at once — a dwarf tree planted at 6,000/ha beats a tall Bourbon at farm level while being merely average tree-for-tree — but no quantified comparison was found, and 40% should not be repeated as a figure.

To verify

Several specific altitude, yield-per-tree and branch-angle numbers rest on single weak sources. German Wikipedia gives an optimal band of 1,600–2,200 m and typical yields of 400–500 g of green coffee per tree; a Chinese-language retailer blog gives “above 1,500 m” and states that Villa Sarchi’s branches grow at 45–60° angles, which it credits for the wind tolerance — both and cited via the research report only.8 World Coffee Research publishes no ceiling and no per-tree yield; it publishes an altitude floor that rises as you approach the equator, and it confirms the wind tolerance without explaining it. The branch-angle detail is plausible and unverified. Don’t quote a single altitude band for the variety.

It shows up at auction — twice

This is where Villa Sarchi departs from its cousin Pacas, which this wiki could not find in a single Cup of Excellence result. Villa Sarchi has placed in Costa Rica’s national competition in two of the last three years, with published scores, auction prices and named buyers.

Both rows come from the Alliance for Coffee Excellence’s own published results — primary records, not trade reporting.910 Both lots were 345 kg, taking the 2025 lot to a total of US$12,473.68 and the 2023 lot to US$7,681.96. The 2025 competition was judged 26–30 May 2025 and auctioned 8 July 2025.

Costa Rica 2024 contains no Villa Sarchi lot at all — that year’s tables run to Geisha, Catuaí, Typica, San Roque and “otros”.11

Read the scale honestly. Two lots in three years of one national competition, neither in the top five, is a thin record — Geisha dominates those tables the way it dominates everything. But 88.13 and 87.71 are real, certified scores on real lots, and US$16.40/lb is a genuine specialty price. That is more cup evidence than exists for Pacas and more than exists for the whole generic Catimor family. It also lands the variety in the same score band as the Sarchimor selections it fathered — Parainema’s Honduran placings run 87.3–88.1.

One detail worth pausing on: the 2025 lot placed in the Experimental category, where the process is the story. The 2023 lot was a plain natural and finished 26th. Villa Sarchi’s route onto a Costa Rican score sheet appears to run through processing, not through the variety alone.

To verify

The research report behind this note concluded that no competition results for Villa Sarchi existed. It stated that “no Best of Panama, ACE auction, or SCA/CQI competition results explicitly mentioning ‘Villa Sarchi’ as a variety were found,” and that no verifiable price or buyer data could be given. Direct checks of the Alliance for Coffee Excellence results pages for Costa Rica 2023, 2024 and 2025 found the two lots tabled above. The table stands on those primary pages; the report’s negative finding was a gap in its search, not a fact about the variety. The search is still not exhaustive — only three years of one country’s competition were checked, and no Best of Panama, Guatemalan or Honduran results were searched for Villa Sarchi lots.

What it tastes like

The formal answer is one word: World Coffee Research rates Villa Sarchi’s quality potential at high altitude as “Good” — the same rung it gives Caturra and Pacas, one below the “Very Good” it gives Bourbon, well below the “Exceptional” reserved for Geisha and Pacamara. The two Cup of Excellence scores above sit comfortably above what “Good” would suggest, which is the usual lesson: a variety rating is a ceiling estimate for the average farm, not a verdict on a well-grown lot at 1,700 m.

A producer description gives the most concrete sensory account available. Café Govantes, a Costa Rican producer, grows Villa Sarchi between 1,450 and 1,750 m and processes it as a honey retaining more than 70% of the mucilage, describing the cup as sweet with mandarin-like citrus acidity, a creamy body, and fruity notes with hints of nuts, plus tropical fruit and chocolatey sweetness.12

That honey detail is not decoration. Retaining most of the mucilage — the sticky fruit layer left on the bean during drying — is the deliberate lever for sweetness and body, which is exactly what the description reports. See Honey process.

To verify

Beyond the two Cup of Excellence scores, every flavour note for Villa Sarchi is trade prose. Roaster descriptions run to “fruit-driven sweetness, clean fruit acidity”, “dark chocolate, red fruits, nuttiness”, “peach and pineapple with a nutty, dark-chocolate aftertaste” and “elegant acidity with intense fruit sweetness” — all and cited via the research report only.13 None presents cupping data, and no SCA or CQI score for a Villa Sarchi lot was found outside the Cup of Excellence results above. The only defensible numbers on this page are 88.13 and 87.71.

What it fathered

Villa Sarchi’s largest mark on coffee is not a cup. It is a pedigree.

Breeders crossed Villa Sarchi with the Timor Hybrid — the natural Arabica × Robusta accident that carries rust resistance from its Robusta side — and the result is the Sarchimor family. The name is a portmanteau of the two parents. Villa Sarchi contributed the short, densely plantable frame and the Bourbon cup behind it; the Timor Hybrid contributed the one thing Villa Sarchi conspicuously lacks.

Full detail on each line is on the Sarchimor note. The structural point is a neat symmetry: Catimor is Timor Hybrid × Caturra, Sarchimor is Timor Hybrid × Villa Sarchi. The two great rust-resistance families differ mainly in which dwarf Bourbon went into the cross — and, per the World Coffee Research catalogue ratings, the Villa Sarchi side kept more of the cup.

To verify

The date of the Villa Sarchi × Timor Hybrid cross is unsettled, and this wiki has flagged it before. The World Coffee Research page for Villa Sarchi refers to the Sarchimor cross being made for rust resistance in 1967, which matches Sweet Maria’s account of the family being developed “around 1967” at CIFC in Portugal.14 But the catalogue’s own T5296 entry gives no founding year for the group and instead dates the canonical line to field trials at CATIE in 1971. The Sarchimor note explicitly warns against stating 1967 as fact, and that warning stands until a primary CIFC record is read. CIFC making the cross in 1967 and CATIE trialling the result from 1971 would reconcile the two, but no source makes that argument — it is a guess.

Where it is actually grown

Costa Rica, overwhelmingly — and within Costa Rica, the West Valley / Alajuela corridor around Sarchí that gave it its name. The catalogue confirms Honduras from 1974; trade sources add small specialty-scale plantings in Guatemala and Honduras and, more marginally, Panama.

Note that the two Costa Rican competition lots above come from different regions — Valle Occidental in 2025, which is the variety’s home ground, and Pérez Zeledón in the far south in 2023. It travels within the country.

The farms that put their name on it

Away from the competition tables, Villa Sarchi turns up as a routine named microlot on importer and producer offer pages. Four of those were read directly for this note:

Three things fall out of that small sample, and they line up with everything above.

The processing is almost always natural. Three of the four are naturals and the fourth is a heavy honey — nobody in this sample is selling a washed Villa Sarchi. That echoes the Cup of Excellence pattern, where the higher-placing 2025 lot went in as an Experimental process entry. The variety’s commercial identity in Costa Rica is bound up with leaving fruit on the bean.

The altitudes straddle the catalogue’s own floor. World Coffee Research puts Villa Sarchi’s optimum “above 1,300 m,” yet Hacienda Sonora’s lot is picked at 1,200–1,300 m — at or under the line — while Café Govantes tops out at 1,750 m. A 550-metre spread inside one small country is a reminder that the catalogue’s altitude figure is a recommendation, not a rule farms follow.

Nobody publishes a number. Not one of these pages carries a cupping score, an FOB price or a farm-gate price. Compare the Cup of Excellence rows above, where score, price per pound, lot weight and buyer are all on the public record. Outside a competition, Villa Sarchi trades as an ordinary specialty microlot with a story attached rather than a trophy lot with a paper trail — which is roughly what a “Good”-rated, small-beaned traditional variety should be.

Hacienda Santa Anita carries one extra detail worth recording: Ally Coffee describes it as led by fifth-generation producer Enrique Carvajal alongside his father, with farm roots dating to 1850, and as the first farm certified carbon neutral under Costa Rica’s NAMACAFE initiative.16 See Carbon-negative coffee for what that class of claim involves.

To verify

Three further Villa Sarchi lots come from retail pages this wiki could not open. The research report behind this note describes a Finca Las Mercedes lot from San Marcos, Tarrazú — natural, dried on raised beds, at “6,000 feet” (≈1,830 m) — sold by Volcanica Coffee;18 a Las Lajas natural at 1,500 m sold by the Romanian roaster Kintsu;19 and a La Ele Estate natural from Bajo Canet, Tarrazú, produced by Alberth Monge, sold by Pirates of Coffee.20 The Volcanica page returned a rate-limit error on direct fetch and the other two were not fetched. All three are roasted-coffee retail listings, the weakest tier of source for farm data, and each is a single source. Treat the farms as claimed, not confirmed. If the Las Mercedes altitude is right it would be the highest-grown Villa Sarchi documented anywhere on this page.

No intellectual-property claim, plant-variety registration or licensing regime attaches to Villa Sarchi in any source consulted. Like Caturra, Pacas and Bourbon itself, it is a mid-century spontaneous mutation that a public institute stabilised and gave away — an open, freely plantable traditional variety, which is precisely why breeders in four countries could use it as a parent without asking anyone.

Why it matters

Villa Sarchi completes the argument that Bourbon, Caturra and Pacas set up between them. The same dwarfing accident happened three times in three countries, and three separate farming communities made the identical trade within a generation: take the short tree, plant it tight, accept the rust. That is not a fact about coffee genetics. It is a fact about what farmers wanted badly enough to gamble a crop on.

Then Villa Sarchi does one thing the other two did not. Coffee breeding’s central project for fifty years has been bolting rust resistance onto a productive dwarf Arabica, and it was run twice in parallel — once through Caturra, once through Villa Sarchi. The Caturra branch produced Catimor, which is the reason “rust-resistant hybrid” became an insult in specialty coffee. The Villa Sarchi branch produced Sarchimor, which kept enough of the cup to keep placing at 87-plus in Honduras.

The small-beaned Costa Rican mutation picked the winning side of that experiment.

The variety has no institution of its own. As with Caturra and Pacas, the World Coffee Research record is the authoritative public entry for it.
