Instituto Agronômico de Campinas

The Instituto Agronômico de Campinas — universally IAC — is a state-government agricultural research institute in Campinas, São Paulo, Brazil. It does not sell coffee, does not own a brand, and has never appeared in an auction catalogue. What it does is make plants, and three of the plants it made are why Brazilian and Central American coffee looks the way it does.

If you have drunk Brazilian coffee, you have almost certainly drunk IAC’s work under someone else’s name. Mundo Novo rebuilt Brazil’s crop after the war. Catuaí replaced it and now covers a large share of the country’s Arabica and much of Central America’s. Caturra, found by a farmer, was turned into a plantable variety by IAC’s selection programme and went on to become the standard tree of Colombia and Costa Rica.

That is an unusual kind of fame. The institute is a line in a variety catalogue and a footnote on a bag — the same shape of legacy as El Salvador’s ISIC, except that IAC is very much still open and still breeding.

What it is, plainly

It is a public research institute owned by the state of São Paulo, not a federal body and not a private company. Its headquarters sit at Avenida Barão de Itapura, 1.481, Botafogo, Campinas (SP), CEP 13020-902 — confirmed on its own site, which also lists a Divisão de Pesquisa e Desenvolvimento de Café (Coffee Research and Development Division) among its research units.12

Administratively it sits under the Agência Paulista de Tecnologia dos Agronegócios (APTA), which in turn reports to São Paulo’s Secretariat of Agriculture. Coffee is one part of a much wider remit — the institute researches horticulture and field crops generally, and as of January 2005 employed 172 scientific researchers and 391 support staff across roughly 12.8 km² of land and experimental farms.

Origins — an institute founded by an emperor

IAC was founded in 1887 by Dom Pedro II, Brazil’s last emperor, as the Imperial Agronomical Station of Campinas, and was transferred to the state government in 1892.3 It is described there as “the oldest institution of its kind in Latin America.”

The specific founding date circulating in Brazilian institutional material is 27 June 1887. That day is consistent with the only piece of it that could be checked directly: Embrapa, Brazil’s federal agricultural research corporation, published a notice headlined “Instituto Agronômico – IAC completa 127 anos” — IAC turns 127 — dated 27 June 2014, which puts the anniversary on 27 June 1887 (only the headline and dateline were readable — the article body is currently withheld under Brazilian electoral-period publishing restrictions).4

Read the founding date next to the coffee: 1887 is the year before Brazil abolished slavery, at the height of the São Paulo coffee boom that the empire’s economy ran on. The institute was not set up as a general science project. It was set up because coffee was the country’s money.

The first director was Franz Wilhelm Dafert, an Austrian scientist hired to run the new station. An earlier pass on this note could not confirm the name and flagged it; it is now read directly at source in a Campinas civic history of the institute, which calls him “Dr. Franz Wilhem Dafert, um cientista austríaco”.5 Independent Brazilian material assembled for this note — a PUC-Campinas journal study of the imperial station’s first decade and an IBGE library record — names him too.67 Neither Wikipedia entry, Portuguese or English, names any director at all, so this is a case where the local and academic record is better than the encyclopedia one.

Note what is not settled: how long he stayed, and what he actually did to the coffee. No source read here gives his years of service or ties him to a specific piece of coffee research, so he belongs in the founding story and nowhere else on this page.

To verify

There may be an earlier founding, and a different founder. This note states 1887 and Dom Pedro II, which is what both Wikipedia entries say — Portuguese Wikipedia, read directly, gives “Foi fundado em 1887 pelo imperador D. Pedro II” and the 1892 transfer to São Paulo.8 But the Campinas civic history, also read directly, tells it differently in two ways: it dates the founding to 27 June 1887 under Agriculture Minister Rodrigo Augusto da Silva, and says the body originated earlier still as the Estação Agronômica de Campinas, created in September 1885 by a different agriculture minister, “conselheiro Antônio da Silva Prado”.5 The minister detail is probably not a conflict at all — an imperial decree would carry the emperor’s name and the responsible minister’s signature. The 1885 date is a real open question: it would mean the institute’s 1887 anniversary marks an inauguration rather than a creation, which would in turn make every “IAC is N years old” headline — including the Embrapa one used above to fix the 27 June date — measure from the later event. No first-party IAC history page could be reached to settle it (the institute’s site returned 404 on its history URL).

To verify

The institute has changed its name at least twice more, and the dates come from one unreadable source. A historical study of the institute reports that it became the Instituto Agronômico de Campinas in 1922, used Instituto Agronômico do Estado de São Paulo between 1927 and 1935, and then returned to the current name.9 That sequence is plausible and would explain why older literature cites the institute under three different names — but the PDF could not be read (it downloads as unextractable binary, as did the PUC-Campinas study), and no second source consulted mentions any renaming. Portuguese Wikipedia gives only the original imperial name and nothing after it.8 Treat the 1922 and 1927–1935 dates as reported, not established.

The coffee programme

IAC’s coffee breeding programme began in 1932, and it has run continuously since — reported by Embrapa, and independently consistent with Consórcio Pesquisa Café’s statement that the institute had 81 years of dedication to coffee genetic improvement as of 2013 (neither body text could be read today; the Embrapa page withholds its article and the Consórcio server refused the connection. Two independent institutional sources agree, which is why this sits in the body rather than in a warning box, but nobody here has read either page in full).10

Two independent facts on this wiki line up with 1932 and are worth stating because they were verified directly. IAC began formally selecting Caturra in 1937 — five years into the programme — and it made the Catuaí cross in 1949.1112

The coffee work is carried out at what the trade calls the Centro de Café “Dr. Alcides Carvalho” — the Alcides Carvalho Coffee Centre — which studies both Arabica and Robusta for resistance, productivity and quality, and includes a full coffee farm inside Campinas, one of Brazil’s largest cities.13

That naming is now confirmed at source, and so is the sequence behind it. IAC’s own coffee division page states the unit was the Centro de Café “Alcides Carvalho”, was renamed in 2001 to the Centro de Análise e Pesquisa Tecnológica do Agronegócio do Café “Alcides Carvalho”, and is listed today as the Divisão de Pesquisa e Desenvolvimento de Café — one body under three names, not three bodies.14 Portuguese Wikipedia independently gives 2001 as the year the centre was named after Alcides Carvalho, who led the institute’s coffee team from 1935.

The same page dates the creation of IAC’s Seção de Café (Coffee Section) to 1923 — nine years before the 1932 breeding-programme date above. Those are most likely an administrative section and a genetics programme inside it, but no source consulted says so; see Alcides Carvalho, where the tension is flagged.

To verify

The institute’s own site gives a third start date: 1929, not 1932. Read directly today, IAC’s coffee division page says coffee research began with the Coffee Section in 1923, and that genetics and breeding work started in 1929 with the creation of the Genetics Section — “Em 1929, com a criação da Seção de Genética, tiveram início os trabalhos de genética e melhoramento do cafeeiro.”14 Two institutional sources (Embrapa and Consórcio Pesquisa Café, neither readable) say 1932. The gap is three years and the sources disagree in the awkward direction: the first-party one is the outlier. The likeliest reading is that 1929 dates the administrative unit and 1932 the coffee breeding programme proper — but no source consulted says that, and the same ambiguity already muddies the 1923 date. Do not quote a single year for “IAC started breeding coffee” without saying which milestone you mean.

What it actually made

This is the verified core of the page, and none of it comes from IAC. It comes from World Coffee Research’s variety catalogue — a technical reference maintained by a body independent of Brazil — as recorded and fetch-confirmed on this wiki’s variety notes.

Those three rows are a compressed history of twentieth-century coffee agronomy. Caturra is selection — the slow work of turning one lucky tree into a population that breeds true. Mundo Novo is development of an accident nature supplied. Catuaí is breeding proper: a specification written down first (Mundo Novo’s cropping, Caturra’s short frame) and a plant produced to meet it. The institute moved from one to the next over roughly forty years, and by the end of it Brazil’s replanting ran on material coming out of a public institute rather than a seed company.

Brazilian growers also plant Acaiá, Icatu, Catucaí, Arara and Obatã — Brazilian selections commonly described in the trade as IAC or IAC-derived material. As recorded on Mundo Novo and Sarchimor, none of those names has an entry in the World Coffee Research catalogue, so their breeding attributions are not verified here.

The rest of the catalogue

Three famous varieties are the headline, but the institute’s actual output is a long list. As of 2013 IAC reported 65 registered coffee cultivars plus one protected variety, released over more than seventy years of breeding — confirmed on the institute’s own coffee division page.14 Its own summary of that list is the more honest one: “dezenas de cultivares e linhagens de café” — dozens of cultivars and lineages.

To verify

Coffee is a small slice of the institute’s plant-breeding output. A 2023 institutional document prepared for a Campinas civic forum reports that IAC had by then developed 1,154 cultivars across 110 species.16 Against the ~65 coffee cultivars above, that would put coffee at roughly 6% of everything the institute has ever released — a useful corrective to a coffee wiki’s natural assumption that a coffee-famous institute is mainly a coffee institute. The document could not be read (the host returned “Este site não está acessível no momento”), and no other source consulted gives a whole-institute cultivar count, so the figure is reported rather than confirmed.

Four modern releases come up repeatedly in Brazilian technical material, and IAC’s own page names all four:14

Those rows are the shape of what a modern public breeding programme actually sells: not cup scores, but shorter trees, earlier ripening, and resistance to the two things that kill yieldrust and nematodes. The detailed agronomic specifications reported for these cultivars in the research brief — resistance to all rust races currently in Brazil for IAC 125 RN, resistance to Meloidogyne exigua races 1 and 2 and M. incognita race 1, row spacings of roughly 2.00–2.80 m × 0.50–0.70 m for Obatã, and larger seed than Catuaí Vermelho or Catuaí Amarelo — all trace to a single Embrapa article whose body could not be read (the page withholds pre-2026 news under Brazilian electoral-period publishing rules, as it did for the founding-date article above). Treat the specifications as reported, not confirmed.17

To verify

The cultivar count is 65 or 67 depending on the source. IAC’s own page gives 65 registered cultivars plus one protected variety as of 2013.14 The research brief reports 65 from one Embrapa release and 67 from another Embrapa text and a plant-breeding review — neither readable at source. This is almost certainly a live catalogue growing over time rather than a factual dispute, but no dated, current count from IAC was found, so quote the number with its year attached or not at all.

To verify

When rust breeding started: 1950, or the 1990s? The plant-breeding review cited in this note’s brief states that IAC began breeding for coffee leaf rust tolerance in 1950 — roughly twenty years before rust reached Brazil. That arithmetic is consistent with this wiki’s own verified record, which dates rust’s arrival in Brazil to 1970. But IAC’s own division page frames rust resistance as a 1990s priority, pointing at Icatu (1992), Obatã and Tupi.14 The two are reconcilable — 1950 would be when crossing work began, the 1990s when finished cultivars were released, and a forty-year gap between cross and release is entirely normal in coffee (compare Catuaí: crossed 1949, released 1972). But no source consulted states that reconciliation, and the review itself could not be read.18 If you need a date, say when the cultivars were released, not when the work began.

How much of Brazil is IAC’s work — there is now a number

An earlier pass on this note recorded that the scale of IAC’s influence was asserted everywhere and quantified nowhere. A figure has since been found at source. IAC’s own coffee division states that an estimated 90% of Brazil’s more than 4 billion Arabica coffee trees come from cultivars developed by the institute“Estima-se que 90% dos mais de 4 bilhões de pés de café arábica do Brasil sejam provenientes de cultivares desenvolvidos pelo IAC.”14

Read that with the obvious caution: it is the institute measuring itself, and it is an estimate, not a census. But it is first-party, published on the institute’s own site, and the direction and rough size of it are supported by everything else on this page. Roughly nine in ten Brazilian coffee trees are IAC material is a fair summary; treat the 90% as an institutional estimate rather than a counted figure.

The 90% now has a second source outside the institute. A Campinas civic history of the IAC, read directly, says its coffee is “presente em 90% das plantações do Brasil e 70% no mundo” — 90% of Brazil’s plantings and 70% of the world’s.5 Two sources agreeing on 90% is worth something, though a local history writing about the local institute is not fully independent of the institute’s own press material.

To verify

Ignore the “70% of the world” half of that sentence. The same source pairs the 90% Brazil figure with a claim that IAC coffee covers 70% of plantings worldwide.5 Nothing on this wiki supports it and the arithmetic argues against it: Ethiopia and Yemen grow landrace and heirloom material with no IAC involvement at all, Colombia and much of Central America plant Caturra and Catimor-group and Sarchimor-group lines, and roughly 40% of world production is Robusta, which IAC’s famous Arabica cultivars have nothing to do with. A generous reading is that it counts anything descended from or selected by IAC, Caturra included, which would stretch the number a long way. Do not repeat the 70%.

To verify

A second version of the same claim gets the units badly wrong. This note’s research brief reports the same 90% share from a plant-breeding review, but states it as “about 4.3 million Arabica coffee trees grown in Brazil” — three orders of magnitude below IAC’s own 4 billion, and far below any plausible figure for a country that plants millions of hectares. The review could not be read at source (the PDF returned unextractable binary), so it is impossible to say whether the error is in the review or in the brief’s reading of it. Use IAC’s own number.18

Note also that the variety-level share figures elsewhere on this wiki — the roughly 50% or 60% of Brazilian planting attributed to Catuaí alone — remain flagged there as untraceable industry estimates. The institute-level 90% does not validate them.

To verify

A widely repeated development timeline conflicts with the documented one. Sucafina states that Mundo Novo and Catuaí each took “over 40 years to develop”. The World Coffee Research record gives 1949 to 1972 — 23 years — for Catuaí, and 1943 to 1952 — nine years — for Mundo Novo. Forty years is not a rounding error on either. The likeliest reading is that the trade figure counts continuing selection and colour-type work after commercial release, but no source consulted says so. Use the catalogue dates.

The parts that aren’t breeding

A breeding programme is the visible half. The research brief for this note credits IAC with several less glamorous contributions that arguably changed Brazilian coffee just as much — cultivar recommendations, fertilisation, spacing and plant density, pruning systems and irrigation, plus soil fertility, mineral nutrition, soil and leaf analysis, and liming, all reported as fundamental to the modernisation of Brazilian coffee growing. None of it could be read at source, so it is reported here as claim rather than fact.17

Two specific claims are load-bearing enough to flag on their own.

To verify

Coffee zoning for São Paulo state. IAC is reported to have produced the agro-climatic zoning for coffee in São Paulo — mapping which parts of the state have the temperature and water conditions coffee actually wants. Plausible and entirely ordinary work for a state agricultural institute — but unread at source and unconfirmed.

To verify

IAC and the invention of pulped natural — this contradicts an existing note. The same Consórcio Pesquisa Café article is reported to say IAC established the basis for cereja descascado — Brazil’s pulped natural process — in the 1960s, as a way to improve quality in more humid regions (source unreachable). This wiki’s Pulped natural note already records that nobody agrees when that process started: it collects claims for the 1950s and for the 1990s, forty years apart, and concludes “do not quote a date for the invention of pulped natural.” The 1960s claim is now a third date, and it is the only one that names an institution. It does not settle the question — it widens it. Do not state that IAC invented pulped natural.

To verify

The analysis laboratory, and a medal at the 1904 World’s Fair. An IBGE library record for a work on the institute states that IAC was the first institution in Brazil to carry out soil and plant analysis, and that it won a Silver Medal for Soil Analysis at the 1904 St. Louis World’s Fair.7 Both fit the institute’s own account of itself — its site still lists laboratory analyses among its services, and soil and leaf analysis is exactly the boring infrastructure that lets a breeding programme measure anything at all. But this is one source, unread in full, and Portuguese Wikipedia — checked directly for it — mentions neither claim.8 A medal at a named world’s fair should be checkable in the exposition’s own award lists; nobody here has checked.

Machines and yields

Two further claims from the brief sit in this same category — plausible, institutionally sourced, and unreadable at source.

To verify

Mechanised harvesting, and a 23% cost saving. A video about the Alcides Carvalho Coffee Centre credits IAC with the research that made machine harvesting viable on Brazil’s flat coffee ground, and puts the saving at 23% against hand-picking.17 The broad claim is uncontroversial — Brazil is the one major origin that harvests mechanically at scale, and flat topography is why. The 23% figure has no stated baseline, year or trial conditions, and comes from the institute describing its own work in a promotional video. Do not repeat it as an industry number.

To verify

Yields: two ranges that don’t match. The brief reports Embrapa giving modern IAC cultivars about 50 bags per hectare irrigated and 30–45 bags unirrigated, and a technical description reproduced by a reseller giving up to 60 bags irrigated and 25–35 unirrigated (a bag is 60 kg). Neither could be read at source. These are almost certainly trial ranges for different cultivars in different regions rather than a contested single figure, but the spread is wide enough that quoting either as “IAC yields” would be misleading. What both agree on is the shape of it: irrigation roughly doubles the floor, which is the whole economic argument for the short, dense, irrigated plantings these cultivars were bred for.

What it is working on now

Sucafina, visiting the institute, reports current work on naturally decaffeinated coffee plants — Arabica selections carrying low or zero caffeine — alongside the resistance, productivity and quality programmes. It names Sergio Parreiras, a scientific researcher there for over twenty years, and Dona Ivone, who spent 65 years in the cherry-selection laboratory and worked on both Mundo Novo and Catuaí.

That is one trade source, fetch-confirmed but not corroborated, and it is a green-coffee trader writing about a visit — treat the caffeine-free programme as reported, not as a published result. The Dona Ivone detail is worth keeping for a different reason: 65 years in one laboratory is roughly the entire span from Mundo Novo’s release to today, and it is a useful correction to the idea that plant breeding is done by institutions rather than by particular people doing the same careful job for decades.

It has no competition record, and that is the correct answer

No competition placement, cupping score, auction price or buyer is attached to IAC anywhere. The research brief searched for Cup of Excellence and ACE records, Best of Panama-style auction results, and SCA and CQI scoring documentation tied to IAC and found none. There is no published altitude for its Campinas farm or its trial plots either.

That absence is structural, not a gap in the research. A breeding institute is not a producer. Its output is seed handed to farmers, and it reaches the score sheet under their names — as it did at the 2019 Cup of Excellence Brazil, where the winning lot was a Yellow Catuaí at 92.23 points, sold at $60.10/lb, and where Catuaí, Catucaí, Acaiá and Arara between them took most of the podium.19 Every one of those is IAC material or IAC-derived material. The institute’s name appears on none of it.

Why it matters

IAC is the strongest argument this wiki has against a story specialty coffee likes to tell itself — that bred varieties are the compromise and found varieties are the good stuff.

The comfortable version says heirlooms and lucky mutations cup well while laboratories produce hardy, dull Catimors. IAC’s record does not fit. A state agronomy institute working on yield, plant height and fertiliser response produced Catuaí, and a Catuaí beat a Geisha at Brazil’s own Cup of Excellence and sold for double. What predicts quality is not whether a plant was bred but what it was bred for, and how much altitude, farm and processing the grower brings afterwards.

There is a second lesson in the citation trail on this page. The institute is 139 years old, still operating, and still has its own website — and yet the load-bearing facts about its coffee work had to be assembled from a Swiss green trader’s blog post, an encyclopedia article, and two Brazilian institutional pages that could not be read at all today. The reason we can state with confidence what IAC bred and when is that World Coffee Research, in another country, wrote it down and keeps the page up. As on ISIC: institutional memory in coffee is thinner than it looks, and it usually survives in somebody else’s catalogue.20
