Honey process
Honey process is a way of preparing coffee after picking. The outer skin and fruit of the cherry are squeezed off, but the mucilage — the thin, sticky, sugary layer clinging to the seed underneath — is deliberately left on while the coffee dries (Sprudge, accessed 2026-07-23; Peet’s, accessed 2026-07-23).
No honey is used, and none ends up in the cup. The name comes from how the seeds look and feel while drying: glistening and tacky. Peet’s puts it plainly — “it is this glistening, sticky appearance of the pulped seeds that gives the processing method its name,” and Sprudge states outright that “no actual honey is involved” (both accessed 2026-07-23).
Once the coffee has dried down to target moisture, the hardened parchment shell is milled off and the green coffee is sorted and bagged for export — the same finishing steps every other process ends with.
Where it sits between the other two methods
Every coffee has to have its fruit removed somehow. The two classic answers sit at opposite ends, and honey process is the deliberate middle:

Peet’s describes honey coffees as combining “the juicy fruit of a natural coffee and the clean, balanced acidity of a washed coffee,” with “sweeter profiles and bigger bodies” than washed lots (accessed 2026-07-23). Sprudge reports the same association: “balanced acidity and body and intense fruit sweetness” (accessed 2026-07-23).
Two practical consequences follow. First, it uses far less water than washed processing, which also means far less wastewater to treat afterwards (Peet’s, accessed 2026-07-23). Second, it is harder to get right: sugary seeds drying in the open can ferment too far or grow mould, so drying beds have to be raked and watched. As Peet’s puts it, “if the process isn’t meticulous, you can really mess up the final product.”
The method is closely related to Brazil’s pulped natural style, which likewise dries depulped coffee with fruit residue attached; honey process is often described as a Central American refinement of that idea (Sprudge, accessed 2026-07-23; Perfect Daily Grind, accessed 2026-07-23).
The colours: white, yellow, red, black
Bags labelled “red honey” or “black honey” are describing how much mucilage was left on, and how the lot was dried. The convention runs in one direction: the darker the name, the more sticky fruit stayed on the seed, the slower and shadier the drying, and the closer the cup moves toward a natural coffee. Lighter names mean less mucilage, faster sunnier drying, and a cup closer to washed (Sprudge; Peet’s; Perfect Daily Grind — all accessed 2026-07-23).
Peet’s gives the ordering directly: yellow honey “has the least mucilage and is closest to washed,” black honey “has the most and is closer to natural,” with red in between.

The percentages behind the colours. Perfect Daily Grind assigns specific mucilage retention figures — black 75–100%, red 50%, yellow ~25%, white ~10% (Perfect Daily Grind, January 2025, accessed 2026-07-23). No standards body publishes these numbers, and no second independent source consulted repeats them. Treat them as one publication’s summary of a loose producer convention, not a definition. The colour terms are not certified or audited by anyone — two farms can label the same coffee differently.
Where it came from
Costa Rica is the country typically credited with popularising honey processing, with the broader Central American belt as the place the style was refined (Sprudge, accessed 2026-07-23; Perfect Daily Grind, accessed 2026-07-23). Both sources place the spread in the late 2000s and early 2010s, and both note the method was initially treated with suspicion in the specialty trade before becoming a routine offering.

The 2008 earthquake origin story. Perfect Daily Grind reports that after a major earthquake in 2008, the Costa Rican government “imposed water usage restrictions – forcing Costa Rican coffee producers to innovate with their processing methods” (Perfect Daily Grind, January 2025, accessed 2026-07-23). This is a single source, and no primary document — government decree, ICAFE bulletin, or contemporaneous report — was found linking the water restrictions to the adoption of honey processing. Plausible and widely repeated, but not established.
To verify
Named originators and the global spread. The same article credits Graciano Cruz of Panama with introducing honey processing to El Salvador, names Jorge Raúl Rivera — a three-time Cup of Excellence winner in El Salvador — among its early champions, and says the method is now used in Guatemala, Vietnam, Myanmar, Peru and Uganda (Perfect Daily Grind, January 2025, accessed 2026-07-23). Each of these is single-sourced; none was confirmed against a producer, mill, or competition record.
Why it matters
Honey process turned up at the very top of the market, not just in everyday lots. The Costa Rica 2018 Cup of Excellence record — $300.09/lb for a honey-process Geisha — stood as the benchmark national record before Ethiopia overtook it, and it more than doubled the previous CoE high (see Cup of Excellence records by country). Panama’s Elida Estate has sold honey-processed Geisha lots through its private auction, and Finca Sophia runs honey alongside washed and natural at nearly 1,900 m.
It also changed what a producer is. A farm that only ever washed its coffee had one lever to pull — grow it better. Honey processing added a second: decide, batch by batch, how much fruit to leave on. That is the same instinct behind the anaerobic and extended-fermentation lots now filling competition tables, and Perfect Daily Grind argues those newer methods have taken the “experimental” spotlight honey process once held (accessed 2026-07-23). Honey process is no longer exotic; it is infrastructure.
For a reader, the practical takeaway is small but useful: “honey” on a bag is a promise of sweetness and body, not of fruit-bomb intensity — and the colour word next to it tells you which way the coffee leans.
